After I made the pepperoni pizza puffs, I was curious about trying to make a pepperoni pizza quick bread. So I took the pizza puff recipe, doubled it, and poured the batter into a loaf pan.
When the bread loaf first came out of the oven, it was nice and puffy. However, unlike the puffs, after it cooled, it collapsed on itself. I haven’t figured out how to solve this problem, but it still tasted good.
This is a quick and easy bread to make for your family. I’ll play with it more to try to get a recipe that doesn’t collapse.
Pepperoni pizza quick bread
1 1/2 cup flour
1 1/2 teaspoon baking powder
1 1/2 cup milk
2 cup shredded cheese (I used cheddar)
1/4 cup pepperoni, chopped
1. In a large bowl, combine flour, baking powder, milk, egg until batter is lump free. Stir in cheese and pepperoni bites Pour batter into a greased 9 x 5 inch loaf pan. Sprinkle Italian seasoning on top.
2. Bake in an oven preheated to 400 degrees for 35-40 minutes. Serve while warm.
