After I made the pepperoni pizza puffs, I was curious about trying to make a pepperoni pizza quick bread. So I took the pizza puff recipe, doubled it, and poured the batter into a loaf pan.
When the bread loaf first came out of the oven, it was nice and puffy. However, unlike the puffs, after it cooled, it collapsed on itself. I haven’t figured out how to solve this problem, but it still tasted good.
This is a quick and easy bread to make for your family. I’ll play with it more to try to get a recipe that doesn’t collapse.
- 1 1/2 cup all purpose flour
- 1 1/2 tsp baking powder
- 1 1/2 cup skim milk
- 2 eggs
- 2 cup shredded cheddar cheese
- 1/4 cup pepperoni chopped
- Italian seasoning
Preheat oven to 400°F. Grease a 9x5-inch loaf pan.
In a large bowl, combine flour, baking powder, milk, egg until batter is lump-free. Stir in cheese and pepperoni bites Pour batter into prepared pan.
Bake the bread for 35-40 minutes. Serve while warm.
