Watermelon Sorbet in Lime Shells

I’m so excited that it’s almost summer. I don’t even know why since I just have work as usual. But my head is full of summer recipe ideas lately including these mini watermelon sorbet.

These are perfect for a party, bbq, or just a regular summer day.

The sorbet is easy to make and is a great way to use up too much watermelon. The lime shells take a little effort and time to get the flesh completely out. For the seeds, I used chopped chocolate. You can also use mini chocolate chips.

Watermelon Sorbet in Lime Shells

Yield: 10-12

Ingredients:

2 cups watermelon juice
1/4 cup sugar (I may reduce this next time because I found it was too sweet)
1/8 cup corn syrup
about 5-6 limes
mini chocolate chips or chopped chocolate

Directions:

1. Heat corn syrup and sugar in a small saucepan until sugar is dissolved. Blend into watermelon juice. Pour mixture into ice cream maker and make according to manufacturer instructions. Place in freezer to further solidify the sorbet.
2. After sorbet is ready, prepare limes. Slice limes in half, lengthwise. Using a sharp knife, cut into white portion of lime to carve out flesh. Use hands to pry out flesh from lime. If you are in the white area, you should be able to pry it out in one piece and leave shell completely clean. Wash and dry shells before using.
3. Scoop sorbet into limes and smooth surface with a spatula. Add chopped/mini chocolate chips to surface so it resembles watermelon seeds. Smooth out sorbet again. Cover limes with plastic wrap or place in container and refreeze until ready to serve.

    So cute! What a clever idea! I wish I had an ice cream maker, then I’d be making sorbet or ice cream all the time!

      You should get one! I’m sure you could make lots of fun stuff with TC. If you do think in investing in one, I have the Cuisinart and I love it.

    These sorbets look amazing! I love the ones you get from costco that are in fruit shells like this, coconut shell, orange, lemon, etc. This looks like the perfect way to make a homemade version. DELICIOUS!

      I love the Costco ones too! Those were part of the inspiration for this.

      The best part is you can make a lot at once and then freeze them and enjoy them throughout summer.

    question: what do you use for watermellon juice? Do you buy some, or make it yourself? If so, how do you get it to keep that bright red colour? Thanks :)

      I used fresh watermelon. I bought a small personalized one and turned it into juice with my blender. And the color was just the natural color of the watermelon. Since the sorbet doesn’t have anything added other than sugar and syrup, it stays a bright red just like the flesh.
