Parmesan Chipotle Corn on the Cob

Tender roasted or grilled corn, seasoned with cheesy parmesan and spicy chipotle. This chipotle corn recipe is sure to be a popular summer side dish.

Sometimes something so simple can make a world of difference. This corn becomes super addicting with the addition of some simple seasoning and cheese.

Even if you don’t normally like corn, this may change your mind. Mr. K usually doesn’t care for corn on the cob, but he approved of this chipotle corn.

This is the perfect summer side dish for a regular meal or a BBQ party. The corn can be cooked either on the grill or in the oven. I’ve also made Mexican-Style Grilled Corn that can be cooked on the grill or in the oven.

The corn is cooked until tender inside the husks to preserve the flavor. Then it’s cooked a few more minutes with some seasoning, butter, and cheese.

Ingredients

  • Corn on the cob – Remove some of the outer husk leaving the rest intact.
  • Unsalted butter – I use unsalted because Parmesan cheese is already salty, so added salt isn’t needed.
  • Chipotle seasoning – You can find different chipotle seasoning brands in the spice aisle at the grocery store.
  • Grated parmesan cheese – I think freshly grated cheese works best.
  • Other toppings: You can also garnish the corn with fresh lime juice or lemon juice, chopped cilantro or parsley. Some freshly ground black pepper would be good, too. Add these toppings just before serving it.

How to Make Chipotle Corn

Grilling Instructions

Heat the grill and then place the ears of corn on the hot grates. Grill the corn until the kernels are juicy and tender, about 10 to 15 minutes.

Oven Instructions

Preheat the oven to 400°F. Place the corn on the cob on a baking sheet. Bake it for about 30 minutes or until the corn is tender.

After you’ve grilled or baked the corn, carefully peel back the husks and brush on butter. Sprinkle the chipotle seasoning and cheese all over the corn. Pull the husks back around the corn and cook it for three more minutes either on the grill or in the oven.

Once done, remove the silk and husks for serving.

Chipotle Parmesan Seasoning

The inspiration behind this recipe was the complimentary Grill Master Kit and samples I recently was sent by Urban Accents to try out. The Grill kit got me so excited that it pushed up my timeline for buying a grill from sometime in the future to must-buy this weekend. I am determined to become an expert griller by the end of summer.

I shared some of the dry glazes and seasonings with my brother because he will be grilling Father’s Day weekend (this kit would also make a good Father’s Day gift). Urban Accents products can be found on their website and at various stores like Whole Foods, Safeway, Sprouts, World Market.

Urban Accents Chipotle Parmesan Corn-on-the-Cob Seasoning

I kept some of the seasonings for myself, which I’m waiting to use once I get my grill. I also had to keep the corn on the cob shakers, which come in Chipotle Parmesan and Spicy Chili Lime.

I especially loved the Chipotle Parmesan cob shaker and so I decided to make a version that anyone can try out, whether they have the cob shakers or not.

Different Ways to Serve Chipotle Corn

I enjoy eating chipotle corn on the cob, but you can cut the kernels off and make a chipotle corn dip or salsa.

Chipotle corn dip: Mix the cooked corn kernels with the chipotle seasoning, some mayo and sour cream, and add in the Parmesan cheese. Add some fresh lime juice and cilantro to make it a dip for parties with tortilla chips or veggie sticks.

Chipotle corn salsa: Mix all of the ingredients and add some fresh diced tomatoes, red onion, jalapenos, lime juice, black beans, and cilantro for a fresh salsa. It’s great with taco bowls, burritos, burrito bowls, fish tacos, taco salads, or as a topping for nachos.

Chipotle Parmesan Corn on the Cob

Ingredients

  • 4 ears corn with a thin layer of husk left on
  • 2 tbsp unsalted butter
  • chipotle seasoning
  • grated parmesan cheese

Instructions

  • For Roasting: Preheat oven to 400°F. Place corn on baking sheet and roast for about 35 minutes until tender. For Grilling: Place corn on grill and cook until tender, about 10-15 minutes.
  • Open husk, spread 1/2 tbsp of butter on surface of each corn. Sprinkle chipotle seasoning. Sprinkle parmesan cheese. Cook for another 3 minutes. Completely remove husk and silk and sprinkle additional parmesan cheese before serving.

  1. This sounds like an amazing side, Kirbie! Corn on the cob reminds me of the summertime in my mother’s Western Pennsylvania hometown, and I cannot wait to make my own rendition of this because I know it’ll be amazing.
