2 Ingredient Keto High Protein Waffles (No Flour Substitutes, Dairy or Butter)
These high protein waffles are low carb, low sugar, and keto-friendly. They need just 2 ingredients and don’t require any flour, flour substitutes, dairy or butter. The waffle batter is easy to prepare and takes about one minute to make.
These are the easiest waffles I’ve ever made. Whisk two ingredients for a few seconds and the batter is ready to be cooked. The waffles are lightly crisp on the outside and soft and fluffy on the inside.
Ingredients
- Peanut butter
- Eggs
Peanut butter: The waffles use natural peanut butter with no added oils. You can substitute with natural almond butter as well but I like the flavor the peanut butter adds to the waffles.
Eggs: The waffles can be made with eggs or just egg whites. The egg white version will be thicker, slightly crispier, but not as soft on the inside as the version that uses full eggs.
If desired, you can also add 1 tbsp of sweetener of your choice to the batter to make the waffles a little sweet. The waffles are not sweet on their own but if you plan on serving them with syrup or fruit, then you don’t really need the waffles to be sweet.
How to Make High Protein Waffles
The peanut butter and eggs are whisked together until the batter is uniform in color and smooth.
Pour some batter into your preheated waffle iron. If you are making mini waffles, you’ll need about 3-4 tbsp of batter per waffle.
Cook the waffles in the waffle iron until lightly golden brown and cooked through. Let the waffles cool slightly before eating. You can serve the waffles with berries, sugar-free syrup, butter, whipped cream, or whatever your favorite toppings are.
Expert Tips
- The egg white only version will result in a thicker batter that you need to spread out slightly in the waffle iron. If you use full eggs, the batter should be pourable.
- If making the egg white only version, you can use liquid egg whites.
- You can add a little sweetener to the waffle batter if you want the waffles to have some sweetness on their own.

2 Ingredient Keto High Protein Waffles
Ingredients
- 2 large eggs, or 6 tbsp liquid egg whites
- 4 tbsp (64g) natural peanut butter with no added oils
Instructions
- In a medium bowl, whisk together the eggs and peanut butter until the batter is smooth and uniform in color.
- Preheat a waffle maker according to the manufacturer's instructions. Lightly grease the waffle maker with cooking spray.
- Pour some batter into the center of the waffle maker and spread gently if needed. The full egg version should be pourable but the egg white only version will require you to spread the batter because it is very thick. The amount of batter needed will vary depending on the size of your waffle maker. If using a mini waffle maker then you will need between 3-4 tbsp of batter per waffle. Close the lid and cook for 2-4 minutes, or until the waffle is golden brown on the outside and cooked through. Remove the waffle and repeat with the rest of the batter.
- Let waffles cool slightly, but they are best enjoyed warm and while the outside is still crisp. You can serve the waffles with your favorite waffle toppings like butter, keto maple syrup, berries, or whipped cream. Store any uneaten waffles in an airtight container in the fridge or freezer.
Notes
- The full egg version will be more moist and soft on the inside. The egg white version will be a little crispier on the outside and not as soft on the inside compared to the full egg version.
- You can add 1 tbsp of sweetener to the batter if you want the waffles to have some sweetness.
