2 Ingredient No Bake Lemon Coconut Balls (No Flour, Eggs, Butter or Oil)
These no bake lemon coconut balls are soft and creamy. The balls need just 2 ingredients and don’t require any flour, eggs, butter or oil. The balls also don’t require any baking or cooking.

These balls are a quick snack or dessert that is also high protein and low sugar They take just a few minutes to prepare and no cooking or baking is required. You can also easily customize them.
Ingredients
- Lemon Icelandic Skyr Yogurt
- Shredded coconut
Lemon Icelandic Skyr yogurt: Lemon Icelandic Skyr yogurt provides lemon flavor and sweetness for these lemon coconut balls. Skyr is an Icelandic dairy product that is often sold as yogurt. It has a very thick texture, similar to Greek yogurt but is thicker and contains more protein. You can also use Greek yogurt, but you will need to add more coconut and the balls will be softer.
Shredded coconut: I used unsweetened shredded coconut. You want to use a very finely shredded coconut for this recipe (the shreds should be thin like string). When the coconut is mixed with the yogurt, it thickens the yogurt so that you can roll the mixture into balls. The balls are also coated in more shredded coconut.
How to Make Lemon Coconut Balls
- Add yogurt and shredded coconut to a small mixing bowl and mix until the coconut is evenly and fully incorporated. Place into the fridge for about 30 minutes to an hour to allow the mixture to firm up.
- Use a 1 tablespoon cookie scoop to scoop the mixture. Roll into balls. Coat the balls in the remaining coconut. If desired, you can also garnish with some lemon zest.
- Place the balls back into the fridge for about 1 hour to firm up. They are then ready to eat.
Expert Tips
- These lemon coconut balls are meant to be just very lightly sweet. If you prefer something sweeter, you can add 1-2 tablespoons of honey to the mixture. You can also coat the balls in sweetened coconut.
- Make sure to use very finely shredded coconut. If your coconut shreds are too thick, they will not make a good binder.
- If you don’t have lemon flavored Skry yogurt, you can use vanilla Skyr yogurt and add a little lemon juice and zest to make it lemon flavored.
- You can make this with Greek yogurt, but you will need more to add more coconut to get the mixture to be thick enough. I prefer using Skyr yogurt since it is thicker than Greek yogurt.

2 Ingredient No Bake Lemon Coconut Balls
Ingredients
- 3/4 cup (184g) lemon flavored Icelandic Skyr yogurt, see note
- 1 cup (70g) finely shredded unsweetened coconut, plus additional 1/4 cup (17g) for rolling, see note
Instructions
- Line a small baking sheet with parchment paper.
- Add yogurt and 1 cup coconut to a large mixing bowl and mix until evenly combined. Your mixture should be thick. Taste and if you the mixture to be sweeter, you can add 1-2 tbsp of honey to sweeten the mixture. Place the mixture into the fridge for about 30-60 minutes to allow it to thicken more as the coconut absorbs some of the moisture from the yogurt. When the mixture is ready, it should be thick enough for you to scoop and gently roll into balls. Add remaining 1/4 cup of coconut to a small bowl and set aside.
- Use a 1 tbsp cookie scoop to scoop the mixture. Release the ball and gently roll into a ball. Place the ball onto your prepared baking sheet. Repeat with the remaining mixture. If you are finding your mixture is too wet or sticky to work with, you can add more coconut to the mixture. Take each ball and roll and coat in the remaining coconut. If desired, you can garnish the balls with some lemon zest.
- Place balls into the fridge for about 1 hour to firm up further. The balls are then ready to eat. Store uneaten balls in the fridge in an airtight container.
Notes
- Coconut note: Make sure to use very finely shredded coconut (string-like texture). Thicker coconut shreds will not bind well. You may need to add a little more coconut to the mixture to reach the right amount of thickness. The amount can vary depending on the coconut you are using and the amount of moisture in your yogurt. I made this with Let's Do Organic Unsweetened Coconut.*
- Sweetness note: This is meant to be a low sugar treat. You can increase the level of sweetness by adding honey to the mixture.
- Yogurt note: I use Siggi's Lemon Skyr Yogurt.* Another popular brand of Skyr yogurt is Icelandic Provisions. You can also use Greek yogurt but you need to make sure it is a thick Greek yogurt and you may need to add more coconut.

Freezing it can make the yogurt icy, but you can give it a try!

Can another brand of yogurt be used in this recipe other than the one that was mentioned?? Or would it be okay to use lemon pudding instead and put some cornstarch in it to make it thicker?? Cuz that brand in particular doesn’t come in lemon near where I live and I would have to order it online and I can’t wait that long cuz it’s for my mother for mother’s day this weekend
Any brand of Icelandic Skyr yogurt should work. We haven’t tested this recipe with a substitute for the yogurt.
Had to use strawberry yogurt as there was no lemon, but they were lovely. So easy to make too.
