These s’more cookies taste just like regular s’mores but you don’t need a campfire to make them. They’re also a lot less messy! Plus, you can make the dough ahead of time and bake the cookies later. If you’re looking for a new holiday cookie recipe to try this year, I think you will love these s’more cookies.
I love s’mores, but they can be messy. The graham crackers make a crumbly mess, the melted marshmallow won’t break when you bite it, the chocolate sticks to your hands and you need a fire to make them. As much as I like them, I never make them.
So, when I saw s’mores cookies a while back I thought “Oh cool, chocolate chip cookies, but with marshmallows and chocolate pieces.” I didn’t think they’d really taste like s’mores, but they did! They really are s’mores in a cookie form.
What I love about S’mores Cookies
- The cookie base has crushed graham crackers that give the cookies a great texture and that classic s’mores flavor.
- The marshmallow maintains an ooey-gooey texture even after the cookies have cooled.
- Instead of chocolate chips, you use a chocolate bar just like s’mores – all you do is chop it into smaller pieces.
- You get everything you love about s’mores without all the mess (and no open flame required!).
- I love gifting cookies and s’mores cookies are great for holiday baking because you can make the cookie dough ahead and keep it in the refrigerator for up to three days before you bake the cookies.
Tips for Making the Cookies
- This s’mores cookie recipe is similar to a chocolate chip cookie recipe – you will need to cream the butter and sugar first before adding the dry ingredients.
- You can buy graham cracker crumbs, or you can buy regular graham crackers and crush them in a food processor. Or, you can place them in a bag and pound on them with a rolling pin to break them down.
- Be sure to refrigerate the dough for at least an hour. This will firm up the butter so your cookies won’t spread as much when you bake them.
- Make sure your marshmallows are fresh and very soft. Stale marshmallows will melt in the oven but they will harden once the cookies cool and won’t be ooey-gooey.
- To make the cookies look like s’mores, don’t add the marshmallows or chocolate until they are almost finished baking. Just before the cookies are done, you pull them out of the oven and press a few marshmallows and chocolate chunks into the tops. They melt in the oven while the cookies finish baking.
What kind of chocolate should I use for s’mores cookies?
Any chocolate bar will work, but higher quality chocolate always tastes better. You can use chocolate chips, but the cookies won’t have that “s’mores look”. I just cut my chocolate bar into small pieces so they look like mini chocolate bars.
How long do the cookies last?
Like chocolate chip cookies, these s’mores cookies will last for two to three days at room temperature. Be sure to keep them in airtight containers. If you’re making them for gifting, I recommend making the dough ahead and baking the cookies the same day you plan to gift them. Just be sure to cool them completely before wrapping them.

Smores Cookies
Ingredients
- 1 3/4 cups all purpose flour
- 1 cup graham cracker crumbs
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup 2 sticks butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 tsp vanilla extract
- 2 eggs
- mini marshmallows enough to put three on each cookie
- 3 oz bar of ghiradelli chocolate broken into small pieces
Instructions
- In a stand mixer, combine the butter and sugars until fluffy.
- Mix in egg and vanilla until combined. Add the flour, graham crackers, salt, and baking soda, mix well. Stir in the chocolate chips.
- Refrigerate dough for about an hour.
- Preheat oven to 375ºF
- Drop ping pong sized scoops of batter onto cookie sheets. Bake for 8 minutes, and remove from the oven. Push 3 marshmallows and three pieces of chocolate bar into each cookie. Return to the oven and bake an additional 2-3 minutes until fully cooked. Cool cookies on a wire rack.
