Cucumber sandwiches are light and fresh sandwiches that are great for lunch, appetizers, or snacks. They’re easy to make with just a few ingredients.

I recently made these adorable mini cucumber sandwiches with my sandwich cutters. I fell in love with these finger sandwiches during our trip to London, but have never made them myself. They’re really easy to make.

For this recipe, I used cute bread cutters that I found on Ebay to cut the sandwiches into cute shapes. Traditionally, they’re just into squares or triangles with the crusts cut off. Using the bread cutter made them even cuter.

I love that they’re bite-sized and I’ve already made them for our house party and for lunches. I think they’d be great for a bridal shower, baby showers, and Mother’s Day brunch, too.

I love the layers of flavor from the cucumber and creamy spread. The taste is fresh and light. The mayonnaise spread is not exactly like the one I had in London, so I’m going to keep working on that, but I was excited to share these because they’re just too cute not to.

Ingredients

  • Thinly sliced cucumbers
  • Softened cream cheese
  • Mayonnaise
  • Garlic powder
  • Onion salt
  • Worcestershire sauce
  • Sliced white bread with the crusts removed
  • A few dashes of lemon pepper

For the bread, I used King’s Hawaiian sliced bread, which is now available at supermarkets. I love the soft, sweet bread with the cucumber and mayo and cream cheese spread.

For the cucumbers, it’s important to slice them very thin so the sandwiches are easy to eat.

Instructions

Line a colander with a paper towel and lay the cucumber slices on it. Top them with another paper towel and let them sit for 10 minutes. During this time, the towels will absorb excess moisture so your cucumbers don’t make your sandwiches soggy.

Mix the cream cheese, mayonnaise, seasonings, and Worcestershire sauce in a small bowl. Spread the cream cheese mixture evenly on half of the bread slices.

Top the spread with the cucumber slices. I like to sprinkle some lemon pepper over the top at this point, but this is optional.  Top them with the other slices of bread.

Slice the sandwiches into squares or triangles. Or, use a bread cutter like I did to create different imprints and shapes.

Tips

If you use an English cucumber you don’t need to peel it because the skin is pretty thin. Regular cucumbers have thicker skins so you may want to peel those if you use them.

When you cut off the crusts, use a sharp knife and a sawing motion with light pressure. This will ensure you don’t squish the bread. A serrated knife works even better than a regular knife.

You can make these sandwiches a little in advance and keep them in the refrigerator. I wouldn’t let them sit too long, though, because they can get soggy.

I’ve made these cucumber tea sandwiches a few times for our lunches. I found a cute Hello Kitty bento box for me and a more manly yellow one for Mr. K. They make the little sandwiches even more fun to eat.

Cucumber Sandwiches

I fell in love with cucumber sandwiches during my trip to London and I had to recreate them once I was back home. I like to cut the sandwiches into fun shapes using bread cutters, but you can also serve them sliced into squares. 

Ingredients

  • 1 medium cucumber, thinly sliced
  • 8 ounces cream cheese, softened
  • 1/4 cup of mayonnaise
  • 1/4 tsp garlic powder
  • 1/4 tsp onion salt
  • 1 dash Worcestershire sauce
  • 1 loaf sliced bread, crusts removed (see note)
  • A few dashes of lemon pepper, optional

Instructions
 

  • First, you want to remove the moisture from the cucumbers (so your sandwiches don't get soggy). Line a colander with a paper towel. Place the cucumber slices on the paper towel and cover them with another paper towel. Let them drain for ten minutes.
  • In a bowl, combine the cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce until smooth. Spread the cheese half of the bread slices.
  • Divide the cucumber slices among half the bread slices. If using, sprinkle the lemon pepper over the cucumber slices. Top with the other slices of bread to make sandwiches.
  • If using, use a sandwich cutter to cut each sandwich into smaller shapes. Or, cut each sandwich into for equal-sized squares.

Notes

  • I used King's Hawaiian sliced bread for my sandwiches, but feel free to use your favorite sandwich bread. The nutrition estimate will vary depending on the bread you use.
