Skinny Bang Bang Zucchini Noodles

A lightened up bang bang sauce is served with low carb zucchini noodles, creating the ultimate skinny dish.

My vegetable spiralizing adventures continue. My favorite thing to spiralize is still zucchini. They make such a great noodle substitute, so it only made sense that I took my beloved skinny bang bang pasta and did a zucchini noodles (or zoodles) version. These made such a fun and tasty lunch.

And I still love my vegetable spiralizer. My mom couldn’t believe I bought yet another kitchen tool. I know I’ve got way too many and most of them don’t get used, but I’ve used this one so many times now, it was definitely $14 well spent. It makes super long zucchini noodles and it’s easy to clean too.

I’m actually determined to use each and every one of my kitchen gadget splurges before the end of the year. We’ll see how far along I get. So if you start seeing posts for homemade yogurt, pasta, and ice cream cones (what was I thinking??), you’ll understand why.

Skinny Bang Bang Zucchini Noodles

Ingredients:

  • 2 medium sized zucchinis, spiralized
  • 1/2 cup fat free plain Greek yogurt (must use Greek and not regular)
  • 1/4 cup Thai sweet chili sauce (smooth kind without seeds)
  • 1 tbsp honey
  • 1 tsp sriracha sauce (or other hot sauce)
  • 1 tsp lime juice

Directions:

1. Cook zucchini noodles in boiling water for about 2-3 minutes or until just barely cooked (tender yet still firm). Drain and remove from water.

2. Add remaining ingredients into a medium mixing bowl. Whisk until smooth. Pour over zucchini noodles and serve right away.

  1. I also LOVE my spiralizer! I have the exact one you have!! (I also have TONS of gadgets, they are the best! We may need to go to Kitchen Gadgets Anonymous! ;0) Nah! that’s why we have so many drawers in our kitchen!!)   Your sauce was so yummy! Used it on spiralized raw cucumber too! Yum! Please keep posting more delicious recipes with spiralizer! 

  2. I don’t have Thai sweet chili sauce (nor will I buy it cause I don’t like these types of packaged foods.) What might you recommend in its place in terms of spices, herbs, etc.? Thanks!

    • the base of the sauce is thai sweet chili sauce. You can always try making your own, but I dont have any suggestions on where to start for that

  3. I, too, have the same spiral-making gizmo. Used it the other night and one zoodle was over 8 FEET long. Some scissors work ensued. Your bang bang sauce looks fantastic. Thanks.

  7. My spiralizer has an option for thick or thin noodles- do you have any advice on what cooks better?

    • I would go with the thicker one as the zucchini shrinks when it cooks and the thicker ones will also stay a little more firm/crisp after they are finished cooking.

  8. Do you think the bang bang sauce would be good on butternut ravioli. I really enjoyed the sauce wondered what other recipes I could use it on. Is the chilli sauce with seeds hotter?

    • I think it could go well with butternut ravioli. As long as you buy the sweet chili sauce, then the one with seeds shouldn’t be any spicier. I prefer the no seeds version because it makes for a smoother sauce but i’ve actually been having trouble finding the one without the seeds and started using the ones with seeds when that’s all I can find and it still tastes good! the sauce is just lighter in color and has little bumps from the seeds.
