This grilled cheese sandwich combines white cheddar cheese and slices of fresh tomato. The slightly cooked tomatoes give the sandwich an almost pizza-like flavor.
Sometimes the best things are the simple things. I’ve made so many grilled cheese sandwiches this year, but this one is one of my favorites. The idea actually came about because one day we came home after a weekend away with no groceries in the fridge. Mr. K was hungry and so I surveyed the contents of our kitchen and realized we had enough to make grilled cheese and tomato sandwiches, using the cheese from my cheese stash, tomatoes from the garden, and leftover bread on the counter that was starting to get stale.
Now we’ve made it several more times as I try to savor the rest of my garden tomato season. Unfortunately, it’s been really hard to do so lately because something has gotten into my garden. I actually don’t know what it is, but the sneaky creatures have been eating my tomatoes. And they seem to have an eye for the pretty ones. I’m not even kidding. They keep stealing the prettiest looking ones that I’m most excited about.
One day it’s there and the next day the entire tomato has vanished without a trace. I was especially mad when it/they stole my purple tomatoes. I tried to grow purple tomatoes this year but for some reason, almost all the tomatoes came out red. Then I finally had one plant that produced two lone tomatoes, but they were gorgeous. A deep purple on top and red on the bottom. And before I could pluck them, they got eaten! I didn’t even have a chance to get a picture.
I don’t think it’s birds because usually they just pick at the fruit but don’t take the entire thing. The most likely suspect is hornworm caterpillars, but we only spotted one and removed it from the garden and I haven’t seen any since. I’m getting so frustrated, I’m ready to install a camera to find the thieves. I just hope I catch and get rid of them soon.
Grilled Cheese and Tomato Sandwiches
Ingredients
- 4 slices Texas toast
- 1 medium tomato thinly sliced
- 4 slices white cheddar cheese
- 2 tbsp unsalted butter
Instructions
- Spread about 1/2 tbsp butter on one side of each slice of bread. Place a slice of cheese on top of the unbuttered side of each bread slice. Add a few slices of tomato to two of the slices. Place remaining slices of bread on top, to form two sandwiches (with butter side facing up).
- Place skillet pan on the stove and turn to medium heat. Once hot, carefully place the sandwiches in the frying pan, cooking the bottom buttered side until golden and toasty and the cheese is melty. Press down on the sandwiches with a spatula or other cooking tool to help it heat through the cheese layer faster. Then carefully flip over and cook until the other side is also toasty and cheese is melted.

So sorry you are losing your gorgeous tomatoes! I’m thinking it might be raccoons. Even rats leave a little bit behind.
hmmm, that is actually possible. While I haven’t seen any in our yard, I have seen them before outside of our neighborhood and a few weeks ago I was still up at 3am and I could have sworn there was a lot of rustling noise coming from my next door neighbor’s yard and at the time I thought maybe their dogs had gone outside, but realized later that didn’t make much sense. I wonder if I can convince my husband to set up a camera!
