These oatmeal bars are soft, chewy and full of blueberry flavor. The bars need only 3 ingredients and don’t require any flour, eggs, butter or oil. They can be enjoyed for breakfast, snack or dessert. They can be made ahead of time and store well.

I love making oatmeal bars for especially busy weeks. I’ve packed these bars for an on-the-go breakfast and snack several times this week.

Ingredients

  • Rolled Oats
  • Blueberries
  • Bananas

Rolled Oats: Rolled oats are also known as old-fashioned oats. I prefer using rolled oats instead of quick oats for these bars because there is a lot of moisture to absorb from the fruit and rolled oats do a better job of it.

Blueberries: I made this recipe with fresh blueberries. You may be able to substitute with frozen blueberries but you would need to defrost and remove as much moisture as possible, otherwise your bars will be too wet. The blueberries are cut in half so that they can cook faster and release their juices into the bars.

Bananas: This recipe uses mashed bananas. You will want to use very ripe bananas which are sweeter and easier to mash. The bananas act as a binding agent and also provide natural sweetness for these bars.

How to Make Blueberry Oatmeal Bars

Stir the mashed bananas with the rolled oats until the oats are fully coated and evenly mixed in. Stir in the blueberries, being careful to not mash them. The batter is then poured into an 8 inch square baking pan lined with parchment paper and baked for about 20 minutes. Once the bars are cooled, you can cut and enjoy.

Texture and Sweetness

The oat bars will have a soft and slightly chewy texture. They are lightly sweetened but not super sweet since the sweetness only comes from the bananas and blueberries. I find the sweetness level just right. If you prefer sweeter bars, you can add sweeter mix-ins like dried fruit or chocolate chips. You can also add a little sugar to the batter (around 2-4 tbsp).

3 Ingredient Blueberry Oatmeal Bars

These oatmeal bars are soft and chewy. They are just 3 ingredients and can be enjoyed for breakfast, snack or dessert.

Ingredients

  • 3/4 cup (184 g) mashed very ripe bananas
  • 2 cups (172 g) rolled oats
  • 3/4 cup (119 g) halved fresh blueberries

Instructions
 

  • Preheat oven to 350°F (177°C). Line an 8 inch by 8 inch baking pan with parchment paper.
  • Add mashed bananas and rolled oats to a large mixing bowl. Mix until oats are fully coated and evenly mixed in. Add in blueberries. Gently stir them in until the are evenly mixed throughout, being careful to not smash the blueberries.
  • Pour batter into the prepared baking pan. Use a spatula to evenly spread it across the pan and smooth the surface.
  • Bake for about 20 minutes or until the oats on the surface are golden brown. The surface of the bars should look dry and cooked. Let bars cool fully before removing them from the pan and cutting and serving. Store uneaten bars in an airtight container in the fridge or freezer.

Notes

  • This recipe works best with fresh sweet blueberries. Cut the blueberries in half before measuring out 3/4 cup. The reason for cutting the berries is so they are smaller and more evenly distributed throughout. It is also so that they will soften and cook faster.
  • Make sure to finely mash the bananas until very few lumps remain. I recommend using a whisk instead of a fork to mash. Measure out 3/4 cup after the bananas are mashed. 
  • The bars are lightly sweetened. If you want them sweeter, you can add chocolate chips, dried fruit or other sweet mix-ins. You can also add 2-4 tbsp of sugar to the batter.
