3 Ingredient Healthier No Bake Lemon Brownies (No Eggs, Refined Sugar, Dairy, Butter or Oil)
These no bake lemon brownies are fudgy and full of lemon flavor. They need just 3 ingredients and don’t contain any wheat flour, eggs, dairy, refined sugar, butter or oil. The brownies also don’t require any cooking or baking.

These brownies are such an easy dessert to prepare. No mixer needed and no baking required. They are fudgy, lightly sweet and lemony.
Ingredients
- Almond flour
- Lemons
- Maple syrup
Almond flour: Make sure to use superfine almond flour which has a finer texture that melts into the batter, creating a very fudgy texture.
Lemons: Fresh lemon juice and lemon zest are used to give the lemons their lemon flavor.
Maple syrup: Maple syrup is added to sweeten the brownies and bind the almond flour.
How to Make No Bake Lemon Brownies
- The almond flour, lemon juice, zest and maple syrup are mixed together until a thick dough forms. You can mix together by hand with a spatula or you can mix with a food processor for an even fudgier texture.
- Press the brownie dough into your prepared loaf pan. Place it into the fridge until set.
- If desired, you can add a healthy frosting before serving.
Texture
These brownies are very fudgy with a nice zesty lemon flavor and are lightly sweetened. They don’t have the texture of a baked brownie but they are very fudgy.
Expert Tips
- To save time, you can mix the ingredients by hand. The dough does come together easily just mixing with a spatula. If you want to take the extra step of making the brownie batter a little fudgier, mix the ingredients in a food processor. The food processor does a better job of mixing and compressing the ingredients together to create an even fudgier texture.
- Make sure to use superfine almond flour. Regular almond flour is too coarse and will cause a gritty texture.
- You can use a sugar-free syrup in place of maple syrup to reduce the sugar in the brownies.

3 Ingredient Healthier No Bake Lemon Brownies
Ingredients
- 2 1/2 cups (241g) superfine blanched almond flour
- 2.5 tbsp (37ml) lemon juice + 1.5 tsp zest
- 6 tbsp (3 fl oz/89 ml) maple syrup
Instructions
- Line an 8 x 4-inch loaf pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, add almond flour, lemon juice, lemon zest and maple syrup. Mix with a spatula until ingredients are evenly combined and form a thick dough. An optional step is to add all the ingredients into a food processor and mix until a dough forms. The food processor compresses the dough a little better and releases some of the oils from the almond flour, creating a slightly fudgier brownie. However, you can just mix everything by hand to make things easier.
- Transfer the mixture to your prepared loaf pan and spread and press it evenly across the pan.
- Place the brownies in the fridge and chill for 2-3 hours (or overnight) until the brownies are set.
- Lift the brownies out of the pan using the parchment and cut the brownies with a sharp knife. If desired, you can also add a frosting on top of the brownies before serving.
- Store bars in an airtight container in the fridge or freezer. These can be eaten straight out of the fridge or at room temperature.
Notes
- Almond flour note: Make sure to use superfine almond flour. To properly measure almond flour using measuring cups for this recipe, first loosen the almond flour in the bag with a spoon and then spoon the almond flour into the measuring cup, leveling off the top with a knife. I used Amazon Grocery superfine almond flour.*

- Optional Healthier Frosting: The bars in the photos are topped with a healthier "frosting" which is actually just vanilla Greek yogurt and some maple syrup. You can substitute with a dairy-free thick yogurt if you need these to be dairy-free. The frosting adds a little sweetness and creates a creamy topping.
- 1 cup vanilla Greek yogurt
- 1-3 tsp maple syrup, as needed
- To make the frosting, add the yogurt to a medium bowl and whisk until it is smooth and creamy. If needed, you can add a little bit of maple syrup to thin it out if you need a runnier consistency.

My daughter enjoyed these more than I did. But I was curious about how long these keep in the fridge?
These should be good for a few days in the fridge in an airtight container.
I prepared this in my food processor and had my pan lined and ready, but I had trouble spreading it and it didn’t look like it would be very thick. I decided to roll it into 16 balls, rolled them in shredded coconut, and flattened them to the shape of an Oreo cookie. Everyone loved them. They were delicious just as written without the coconut too, because I couldn’t resist trying!
You could try pressing the batter in the pan to help it spread more evenly! We’re glad they worked out for you the way you did it!
