3 Ingredient Healthy Almond Cookies (No Flour, Refined Sugar, Dairy or Butter)

These healthy almond cookies are soft and chewy. They are just 3 ingredients and don’t contain any flour, refined sugar, dairy or butter. The cookies are easy to make and take only about five minutes to prepare. The cookies also store well.

I’ve been in the mood for almond snacks and desserts lately, so these cookies satisfied my cravings. The cookies are soft, chewy and lightly sweetened. I added some more sliced almonds on top for texture but it’s completely optional.

Ingredients

  • Almond butter
  • Egg white
  • Maple syrup

Almond butter: These cookies are made with natural creamy almond butter. You want to make sure you use natural almond butter, meaning there are no added oils. The only ingredient listed should be almonds. If you need a substitute for almond butter, I have also made a version using peanut butter.

Egg white: Egg white acts as a binding agent to help hold the cookie together. It also helps make the cookies soft and chewy. If you need a substitute for eggs, I have an eggless version but the texture of the cookie will be a little different.

Maple syrup: The cookies are sweetened with pure maple syrup. Sugar-free maple flavored sweeteners will also work as long as they have a thin, watery consistency like maple syrup. I don’t recommend using any thick syrups like honey or any sugar-free honey substitutes.

How to Make Almond Cookies

The almond butter, egg and maple syrup are mixed together until evenly combined and a dough forms. Use a 1 tablespoon cookie scoop to scoop the dough and place onto a lined baking sheet. Press down on each dough ball to flatten into a thick round disk. If desired, you can sprinkle chopped or sliced almonds on top of the cookies. You can also add mix-ins like chocolate chips. The cookies are then ready to be baked. They will need about twelve minutes in the oven.

Cookie Texture and Sweetness

These cookies have a soft and slightly chewy texture. They are lightly sweetened. If you prefer sweeter cookies you can use sweet mix-ins or toppings like chocolate chips. I added sliced almonds for a little crunchy texture.

These almond cookies are soft and chewy. They are only 3 ingredients and don't contain any flour, refined sugar or butter.

Ingredients

  • 1/2 cup (128 g) natural creamy almond butter
  • 1 large egg white whisked
  • 2 1/2 tbsp (30 ml) pure maple syrup

Instructions

  • Preheat oven to 350°F (177°C). Line a large cookie sheet with parchment paper or a silicone baking mat.
  • Add almond butter, whisked egg white and maple syrup into a large mixing bowl. Stir with a spatula until maple syrup and egg are completely incorporated into the almond butter and your mixture begins to thicken to a cookie dough consistency.
  • Using a 1 tbsp cookie scoop, scoop dough and place onto a prepared cookie sheet, spacing the dough about 2 inches apart. Press down on each dough ball with the palm of your hand so that it forms a thick round disk, about halfway between 1/4 and 1/2 inch thick. Smooth and round the edges of the cookies as needed. If desired, gently press a few sliced almonds on the top of each cookie. You can also use chopped almonds or other toppings or you can leave the cookies plain.
  • Bake cookies for about 12-14 minutes. Cookies should crack slightly during baking and look dry on the surface when done. Let cookies fully cool on baking sheet before removing.

Notes

  • Whisk the egg white before using to break it down so that it will evenly mix into the dough. You want to use the egg white from 1 large egg.
  • Make sure to use natural almond butter that has no added oils. This recipe will not turn out right if it has added oils.
  • This recipe works best with pure maple syrup or a similar syrup with a thin, watery consistency. Sugar-free sweeteners like Lakanto maple flavored syrup will also work. I don't recommend thick sweeteners like honey.
  • The cookies are only lightly sweetened. You can add sweet toppings or mix-ins like chocolate chips if you want sweeter cookies.
