These cookies are an easy dessert to make or gift. They take only a few minutes to prepare and you don’t even need a mixer to make them.

Ingredients

  • Almond flour
  • Butter
  • Keto maple syrup

Almond flour: This recipe works best with superfine almond flour, which melts into the dough better. Regular almond flour will be too gritty.

Butter: Unsalted butter gives these cookies their tender texture and buttery flavor.

Keto maple syrup: A sugar-free maple flavored syrup is used to sweeten the cookies and bind the dough together. Most sugar-free syrups sweetened with a sugar substitute should work, though I recommend to avoid using allulose because allulose can sometimes cause cookies to brown and cook too quickly or can add too much moisture to cookie dough.

How to Make Keto Crescent Cookies

  • The almond flour, melted butter and syrup are mixed together until a soft dough forms.
  • Scoop 1.5 tbsp of dough and roll into a log, about 3 inches long. Bend the ends slightly to form a crescent shape.
  • Place cookies onto your prepared baking sheet and bake for about 20 minutes or until lightly golden brown.
  • Let the cookies cool and set before removing them from the baking pan. If desired, you can dust the cookies with powdered sugar-free sweetener before serving.

Expert Tips

  • I dusted the cookies with powdered sweetener but this is optional. For other garnish ideas, you can also press chopped almonds into the dough before baking or drizzle melted chocolate over the cookies after they are done baking.
  • You can use regular maple syrup if you don’t need these to be low sugar, low carb or keto-friendly.

3 Ingredient Keto Crescent Cookies

Soft, buttery almond crescent cookies that also store well. These easy cookies are great to bring to an event or for gifting. They are just 3 ingredients and are low sugar, low carb and keto-friendly.

Ingredients

  • 2 1/2 cups (260g) superfine blanched almond flour
  • 8 tbsp (113g) unsalted butter, melted and slightly cooled
  • 1/3 cup (79ml) sugar-free maple flavored syrup

Instructions
 

  • Preheat the oven to 325°F (163°C). Line a large baking sheet with parchment paper.
  • Add the almond flour, melted butter, and syrup to a bowl and mix until a soft dough forms. It should feel slightly sticky but hold its shape when pressed. Let it sit for a few minutes so the almond flour can hydrate.
  • Use a 1.5 tbsp cookie scoop to scoop the dough and roll it between your palms into a smooth log, about 3 inches long and 1/2 inch thick. Bend the ends slightly to form a crescent shape. Repeat with remaining dough.
  • Place the crescents onto the prepared baking sheet, spacing them about an inch apart.
  • Bake for about 20 minutes, until the bottoms are lightly golden and the cookies look set around the edges.
  • Let them cool completely on the pan before removing. The cookies will firm up as they cool. If desired, dust the surface of the cookies with powdered sweetener before serving. Cookies should be stored in an airtight container. They can be stored for up to 1-2 days at room temperature and longer in the freezer.

Notes

  • Make sure to use superfine almond flour and not regular almond flour. Regular almond flour will make the cookies gritty. I used Kirkland superfine almond flour.
  • I used ChocZero maple syrup.* I dusted the cookies with powdered allulose.*
