These no bake coconut bites are soft and creamy. They don’t require any baking or cooking. The bites need just 3 ingredients and don’t require any flour, eggs, refined sugar, butter or oil.

These coconut bites make an easy snack or dessert. They are also easy to customize.

Ingredients

  • Desiccated coconut
  • Plain Greek yogurt
  • Maple syrup

Desiccated coconut: Desiccated coconut is a finely shredded coconut that has also been dried so it has less moisture than regular finely shredded coconut. Because it is so low moisture, it is able to absorb a lot more moisture. While you can make this recipe with unsweetened finely shredded coconut, you would need to add a lot more shredded coconut to get the recipe to work.

Plain Greek yogurt: I used nonfat plain Greek yogurt. Plain Greek yogurt gives these balls a very creamy, soft texture. You can use other flavored Greek yogurts as well. Make sure to use Greek yogurt and not regular yogurt. Regular yogurt is too runny.

Maple syrup: Maple syrup is used to sweeten the coconut bites. You can also substitute with honey.

How to Make No Bake Coconut Bites

The yogurt and maple syrup are mixed together until smooth. The coconut is then stirred in until the mixture is thick and scoopable.

Use a 1 tbsp cookie scoop to scoop the coconut mixture and roll between your palms to form a smooth ball. Gently roll each ball in additional coconut to lightly coat each ball.

Place the balls into the fridge to firm up a little more. The balls are then ready to eat.

Expert Tips

  • The amount of coconut needed may vary a little depending on the brand of yogurt, how much moisture is in the yogurt and how much protein is in the yogurt.
  • The balls can be made with unsweetened finely shredded coconut but the amount needed will be different because desiccated coconut absorbs more moisture. We preferred the texture of the balls using desiccated coconut.
  • You can adjust the sweetness by adding more syrup. If you add more syrup, you may need to increase the coconut amount.

3 Ingredient No Bake Coconut Bites

Ingredients

  • 1 cup (74g) desiccated coconut, plus additional 3 tbsp (15g) for rolling
  • 1/2 cup (126g) plain nonfat Greek yogurt
  • 3 tbsp (45ml) maple syrup

Instructions
 

  • Line a small baking sheet with parchment paper.
  • In a medium bowl, stir together the Greek yogurt and syrup until smooth and well combined. Add the desiccated coconut and stir until evenly incorporated and a thick, scoopable mixture forms. Place the remaining coconut into a small bowl.
  • Use a 1 tbsp cookie scoop to scoop the mixture. Release the ball and lightly coat the ball in the small bowl of coconut. Then gently roll the ball between your palms to form a round ball. Place the ball onto your prepared baking sheet. Repeat with the remaining mixture. If you are finding your mixture is too wet or sticky to work with, you can add more coconut to the mixture.
  • Place balls into the fridge for about 1 hour to firm up further. The balls are then ready to eat. Store uneaten balls in the fridge or freezer in an airtight container.

Notes

  • The amount can vary depending on the coconut you are using and the amount of moisture in your yogurt.
  • You can also make this with whole milk Greek yogurt. You will likely need less coconut if using whole milk Greek yogurt.
  • I used Yupik desiccated coconut* and Whole Foods 365 nonfat Greek yogurt.*
