4 Ingredient Cottage Cheese Breadsticks
These cottage cheese breadsticks are soft, cheesy and high protein. The breadsticks need just 4 ingredients and don’t require any yeast or eggs. The breadsticks are easy to prepare and ready in about 30 minutes.

These breadsticks are so cheesy and soft. The cottage cheese adds a boost of protein and even more cheesy flavor to the breadsticks.
Ingredients
- Cottage cheese
- Self-rising flour
- Mozzarella cheese
- Garlic herb butter
Cottage cheese: This recipe works best with a 4% small curds cottage cheese. The cottage cheese needs to be blended so try to choose a brand that blends easily.
Self-rising flour: Self-rising flour is a flour blend that already includes a leavening agent. If you don’t have self-rising flour, you can also make a homemade self-rising flour blend with all purpose flour, baking powder and salt.
Mozzarella: Shredded mozzarella is added to the breadsticks to make them cheesy.
Garlic herb butter: The breadsticks are brushed with garlic herb butter to give them more flavor. Garlic herb butter is butter that is already infused with garlic, herbs and salt. It is usually found at the grocery store next to other butter spreads.
How to Make Cheesy Cottage Cheese Breadsticks
- The cottage cheese is blended until smooth. The blended cheese and flour are mixed together until a dough forms.
- Roll the dough out into a rough rectangle, approximately 10 inches by 7 inches.
- Brush the dough with melted garlic butter. Sprinkle cheese on top to cover the surface.
- Bake the breadsticks until golden and the cheese is melted. If desired, you can brush the surface with more melted garlic butter right before serving or serve the breadsticks with a side of melted garlic butter. I also like to garnish the breadsticks with some finely chopped parsley but that is completely optional.
Texture
The breadsticks are soft, chewy and cheesy, just like regular restaurant-style breadsticks.
Expert Tips
- I recommend using a cottage cheese with around 13 grams of protein per 1/2 cup serving. If the cottage cheese has less protein, it may make the dough too wet. A higher protein cottage cheese will make the dough more dry and also will be difficult to fully blend until smooth.
- You can add more shredded cheese if you prefer.
- You can roll the dough thicker if you prefer thicker breadsticks. The baking time may need to be increased if the breadsticks are thicker.

4 Ingredient Cottage Cheese Breadsticks
Ingredients
- 1 1/3 cups (312g) 4% small-curd cottage cheese
- 2 cups (252g) self rising flour, plus more for dusting , see note before starting
- 1 cup (96g) shredded mozzarella cheese, or more as needed
- ¼ cup (56g) garlic herb butter, melted
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Add the cottage cheese to a blender and blend until completely smooth. Transfer to a bowl, add the flour, and mix until a soft dough forms. Lightly flour your hands and work surface, then knead just until smooth. The dough should be slightly sticky but manageable.
- On a lightly floured surface, roll the dough into a rough 10×7-inch rectangle and transfer to the prepared baking sheet.
- Brush the surface with garlic butter, then sprinkle the mozzarella evenly over the surface.
- Bake for 18-20 minutes, or until the dough is golden around the edges, the cheese is melted, and the top is lightly browned.
- Remove from the oven and immediately brush with the remaining garlic butter. Garnish with some finely chopped parsley if desired. Slice into about 16 breadsticks. Let breadsticks cool slightly, but serve warm. You can also serve with more melted garlic butter or marinara sauce for dipping.
- Store any uneaten breadsticks in an airtight container in the fridge or freezer. Reheat before eating leftovers.
Notes
- Cottage cheese note: This recipe works best with a cottage cheese that blends easily. I found that very high protein cottage cheese, such as Good Culture (around 14 grams per 1/2 cup serving), does not blend as well and will be too thick and not watery enough for the recipe. I used Amazon Grocery cottage cheese which blends easily and contains 13 grams of protein per 1/2 cup serving.

- Self-rising flour note: There are 2 main kinds of self-rising flour sold in the US. One that is a lower protein (2 grams per 1/4 cup serving) flour and one that has a regular amount of protein (3 grams per 1/4 cup (30g) serving). The amount of protein affects how much liquid is absorbed. For this recipe, I tested it with Gold Medal self-rising flour* (regular amount of protein). Please use a self-rising flour with a regular amount of protein (3 grams per 1/4 cup), or make your own self-rising flour with the recipe below.

- Homemade self-rising flour: Whisk together 2 cup all purpose flour, 3 tsp baking powder and 1/2 tsp salt. Make sure your all purpose flour has a regular amount of protein (3 grams per 1/4 cup). Most brands in the US contain this amount but there are some brands with higher protein (4 grams per 1/4 cup) such as King Arthur Flour and Bob's Red Mill. You do not want a high protein flour for these breadsticks because the dough will be too dry.
