4 Ingredient Lemon Brownies (No Wheat Flour, Dairy, Butter or Oil)
These lemon brownies are chewy, soft and full of lemon flavor. The brownies need just 4 ingredients and don’t require any wheat flour, dairy, butter or oil. The brownies take only a few minutes to prepare and you don’t even need a mixer to make them.
These brownies are soft, chewy and lemony. The batter is easily mixed together by hand and takes less than five minutes to make.

- Almond flour
- Powdered sugar
- Eggs
Lemons: Lemon juice and lemon zest give the brownies their lemon flavor. Make sure to use lemon zest because it provides most of the lemon flavor for these brownies.
Almond flour: The brownies are made with superfine almond flour. Make sure to use superfine almond flour and not regular almond flour or almond meal. Superfine almond flour melts into the batter better and mimics the texture of regular flour better. If you need a substitute for almond flour, I do have lemon brownies made with regular flour.
Powdered sugar: Powdered sugar is used to sweeten the brownies and gives the brownies a lighter crumb. It is also used to make the optional lemon icing.
Eggs: Eggs are used to provide structure for the brownies and give them their chewy texture.
How to Make Lemon Brownies
- The almond flour and powdered sugar are whisked together. The egg are whisked in until fully incorporated. The lemon juice and lemon zest are stirred in.
- Transfer the batter to your prepared loaf pan. Bake for about 40 minutes or until the brownies are set.
- Allow the brownies to fully cool before cutting and serving. You can also add a lemon icing over the brownies before serving.
Expert Tips
- These brownies are lightly sweet and not meant to be super sweet brownies. If you prefer sweeter brownies, I recommend adding the optional lemon icing.
- The brownies have a cake-like crumb and chewy texture.
- You can add more lemon zest if you prefer a stronger lemon flavor.

Ingredients
- 1 1/2 cups (130g) superfine blanched almond flour, see note before starting
- 1 cup (120g) powdered sugar
- 2 large eggs
- 2 tbsp (30ml) lemon juice + 2 tsp lemon zest
Instructions
- Preheat the oven to 350°F (177°C). Line an 8 x 4 inch loaf pan with parchment paper, leaving some overhang for easy removal later.
- In a large mixing bowl, add almond flour and powdered sugar. Whisk until evenly combined. Then add in the eggs and whisk until they are fully incorporated. Finally, add the lemon juice and zest and mix until they are evenly incorporated.
- Transfer the batter to your prepared loaf pan. Bake for about 40-45 minutes or until the brownies are set in the center and browned around the edges. Allow the brownies to cool fully before removing them from the pan.
- Once cooled, cut the brownies with a large sharp knife. I like to clean the blade between cuts. If desired, you can also add a lemon icing on the brownies before serving. Optional icing is provided in the recipe notes. Store any uneaten brownies in an airtight container in the fridge or freezer.
Notes
- Almond flour note: It is best to measure the almond flour with a scale. If you are measuring the almond flour with measuring cups, make sure to fluff up the almond flour in the bag first with a spoon. Then spoon it into your measuring cup and level off the surface with a spoon. If you don't fluff up the flour first or you directly scoop the flour with your measuring cup, you will end up with too much almond flour for this recipe. I used Kirkland superfine almond flour.*

- 1 cup powdered sugar
- 2 tablespoons lemon juice
- Whisk together the powdered sugar and lemon juice until smooth. Add water if needed to thin out the icing. Add icing over brownies. You can also garnish with lemon zest.

Can i use any other flourless with this recipe? Can’t use almond flour cause of nut allergy
If you need a substitute for almond flour, I do have lemon brownies made with regular flour.
Being Diabetic theirs times that i have to decide can I eat just 1 if my blood sugar numbers are good today…then I realize that i can make 1 substitution with an alternative powdered sweetener safe for someone like me. Because it will be better for me to stay within my carbs & or sugar limit each day… these do sound easy and delicious! I ususlly try a recipe the way it is first before altering…
