4 Ingredient No Bake Lime Cheesecake Bars

These no bake lime cheesecake bars are creamy and sweet. The bars need just 4 ingredients and don’t require any cooking or baking. The bars can be made ahead of time.

These lime cheesecake bars are an easy dessert to make for any upcoming gatherings such as Father’s Day or other celebrations. I love that you don’t have to heat up the kitchen to make them.

Ingredients

  • Lime juice
  • Cream cheese
  • Condensed milk
  • Graham crackers

Lime juice: You can use freshly squeezed lime juice or store bought lime juice to save time. I like using store bought lime juice for these because the bars do use a lot of lime juice. If using store bought, make sure to buy the kind that is pure lime juice with no added ingredients.

Cream cheese: Cream cheese gives these cheesecake bars a tangy creamy filling. Make sure to use the block style cream cheese and not cream cheese spread.

Condensed milk: Sweetened condensed milk is used to sweeten the bars and give them a creamy filling. When the acid in the lime juice interacts with the milk protein in the condensed milk, it thickens the filling without the need for cooking or adding thickeners.

Graham crackers: Graham crackers line the bottom of the pan to create an easy graham cracker crust for these bars.

How to Make No Bake Lime Cheesecake Bars

  • Line the bottom of your baking pan with graham crackers.
  • Beat cream cheese in a mixing bowl until light and creamy. Add in the condensed milk and mix until the mixture is smooth and uniform.
  • Add in the lime juice until evenly incorporated. Allow the filling to thicken for about 5 minutes. Pour the filling into the baking pan and smooth the top. Place it into the fridge for a few hours to set.
  • If desired you can also add whipped cream and lime zest for decoration.

These lime bars have a creamy tangy filling that is just set enough that you can cut into bars.

Expert Tips

  • You can use store bought lime juice to save time. Just make sure it is pure lime juice and doesn’t have water or other ingredients added to it.
  • This recipe does need regular sweetened condensed milk and will not work with a dairy-free substitute.
  • You can do a double layer of crust for a thicker crust layer or you can keep it at a single layer if you prefer less crust.

These easy lime cheesecake bars are creamy and tangy. They don't require any cooking or baking. They are an easy dessert to make ahead of time for any summer celebrations.

Ingredients

  • 40 individual graham crackers see note before starting
  • 1 (8 oz/ (226g) block full fat cream cheese softened
  • 1 (14oz/397g) can sweetened condensed milk
  • 6 tbsp (3 fl oz/88 ml) lime juice

Instructions

  • Line a 8 inch square pan with parchment paper, leaving enough overhang on top to act as handles so you can lift the bars out of the baking pan later.
  • Line the bottom of your prepared pan with graham crackers. You want to do your best to cover the bottom of the pan with crackers with no gaps, so you may need to cut some of them to fit. I used about 20 crackers.
  • Add cream cheese to a large mixing bowl. Beat on high speed with the wire whisk attachment until it is light and creamy, about 1 minute. Scrape down the sides of your mixing bowl a few times as needed to make sure all the cream cheese gets beaten.
  • Add in the condensed milk. Beat on medium speed until you have a smooth batter. Add in the lime juice. Mix on low speed until the lime juice is evenly incorporated. Scoop about 2 tbsp of filling out. Allow the rest of the mixture to thicken for about 5 minutes.
  • Thinly spread the scooped 2 tbsp of filling across the graham crackers in your baking pan, just covering the surface of them. This will act as a glue for the second layer of graham crackers. Add a second layer of graham crackers on top of the first.
  • Transfer the filling to your prepared pan. Use an offset spatula to smooth and level the surface. Place into the fridge for 2-3 hours or overnight to firm up. Keep bars in the fridge until ready to serve.
  • When ready to serve, cut the bars with a large sharp knife, wiping the blade clean between each cut. Use a cookie spatula to lift the bars onto plates. Store any uneaten bars in an airtight container in the fridge or freezer.

Notes

  • Graham cracker note: Graham crackers usually come in sheets that can be broken into smaller individual crackers (usually 4 to a sheet). 40 crackers refers to the individual crackers. You can do just a single layer of crackers if you prefer less crust or think your crackers are thick enough.
  • Lime juice note: You can use fresh squeezed lime juice or store bought lime juice. If using store bought, make sure that the only ingredient is lime juice. Just because it is labeled "100% lime juice" does not necessarily mean there aren't other ingredients in the bottle so make sure to check the nutrition label. I used Santa Cruz Organic 100% lime juice*.

  1. How can I reduce the sugar, and substitute the sweetened condensed milk?

  2. This is simple yet I know it will taste intense and yummy. I just have a question. You say you need the regular condensed milk and not the reduced fat or sugar free ones, and that’s all good, but can I use a homemade version of condensed milk made with sugar and full fat milk powder?
    I made it and used it in a caramel inside a Millionaire’s Slice and it worked a treat, so just wanting to check if I could use it in this?
