Red Velvet Brownies
This red velvet brownie recipe is easy to make with cake mix. You only need 3 ingredients to make them and they turn out very rich with a fudgy texture.
Red velvet brownies have been on my to do list for a while, but I’m always too lazy to make them. Then I realized I could use cake mix to make them after successfully making my funfetti brownies, and suddenly I wasn’t too tired.
It’s also perfect timing because February also brings those hearts and flowers and lots of pink. I was so pleased with how they turned out I’ll be making them again for Valentine’s Day, but I think they’d also be great for Christmas.
Ingredients
- Red velvet cake mix
- Egg
- Butter
Cake mix: You can use your favorite red velvet cake mix for this recipe. I use Duncan Hines.
Butter: You will need to melt the butter first. I like the flavor it adds to the brownies and it also creates a chewier texture. You can use the same amount of vegetable oil, which works well, too.
Optional toppings: I enjoy these plain, but you can frost the brownies with cream cheese frosting.
How to Make Red Velvet Brownies from Cake Mix
Mix the Batter
Combine the cake mix, egg, and melted butter in a mixing bowl. Mix until combined. The batter will be very thick.
Bake the Brownies
Spread the batter in a prepared baking pan. Bake the brownies for about 25 minutes or until a toothpick comes out clean.
Cool
Cool the brownies before slicing them into squares. Store them in an airtight container at room temperature. They will keep for two to three days.
My brownie batter is too thick. How do I fix it?
Different brands of cake mix have slightly different weights. Some have more mix and some have less. I used Duncan Hines for this recipe, but if you use a different brand, it may have more mix ingredients causing your batter to be too thick or dry.
If this happens, add water, milk, or even a little more melted butter or oil to the batter. Start with one to two tablespoons and add more as needed. The batter should be thick, but not so thick that you can’t spread it in the baking pan.

Red Velvet Cake Mix Brownies
Ingredients
- 1 box of red velvet cake mix
- 1 egg
- 1 stick butter, melted (or 1/2 cup oil)
Instructions
- Grease brownie pan and preheat oven to 350°F. Mix cake mix, egg, and melted butter/oil until batter is smooth. The batter will be quite thick but you should have just enough liquid to mix in all the cake mix. If for some reason it's just too dry, try adding a tad more oil or water or milk, 1 tbsp at a time.
- Pour batter into pan. Bake for approximately 25 minutes, until toothpick inserted comes out clean.

These were terrinn by my dry and I added 2 TBSP buttermilk, one at a time, as recipe suggested. Don’t recommend. Won’t try again!

I love red velvet anything! I’m currently 10 weeks and 3 days pregnant and I’ve been craving this stuff! I wanted to make brownies instead of cake and this was the recipe I tried! It’s in the oven now! ????

I didn’t have any eggs when I came across these beauties, knowing I had a box of red velvet cake mix on the shelf! I used 1/4cup of apple sause and a stick of butter…the batter was so thick and not mixing to well…so…I added about two Tablespoons of some amazing Bailey’s coffee creamer! Creme Brulee to be exact! The result was a red fudgy like browine, flakey crust on top and all! I toped em with oreo cream cheese frosting! Thanks for the wonderful creation that added to my craving!

I saw where oil was mentioned. Would it work with 1/2 stick melted butter and 1/4 cup oil, or does it have to be just one or the other?

Do you add anything else? I tried making them and the batter wasn’t batter. It was too thick to even soak up all the cake mix… =[
The batter should be thick but you should have enough liquid to soak up all the dry cake mix. Try adding a tad more oil or a tablespoon or 2 of milk. The batter definitely will be quite thick.
What size pan was used? 8″, 9″ square? 9 x 13 cake pan?
I used a brownie edge pan. But you can bake it in a 9 square for thicker brownies or a 9 x 13 for thinner brownies.
I used a small sauce pot for a giant round brownie.
I just got a brownie cookbook that had RV Brownies in them that looked interesting. It didn’t have the beautiful red that yours does though.
Ooh. I really need to try making them from scratch. I just hate working with the red dye. I always end up staining my hands. It’s probably better if it’s not such a bright red, less food coloring. heheh
