Green tea mochi cake is an easy cake recipe that you can make with one bowl. The cake is chewy and flavored with matcha powder which gives the cake its natural green color.
For Christmas, my sister got me a Nordic Ware baking pan I wanted. It bakes sheet cakes with daisies on one side. I’ve been trying to decide what to bake with it and the other day I decided to use it to make a green mochi cake.
I thought having the top decorated with flower designs would be a nice touch to the cake.
Mochi cakes are really easy to make – even easier than a regular cake. You only need one bowl to make the batter.
Ingredients
- Mochiko rice flour
- Softened butter
- Sugar
- Evaporated milk
- Eggs
- Baking powder
- Vanilla
- Matcha green tea powder
Recipe Steps
In a large bowl, cream the butter and sugar. Mix in the eggs, rice flour, baking powder, and vanilla.
Add the matcha powder, stir to combine, and pour the batter in a 9×13” baking pan.
Bake the mochi cake for an hour at 350°F and then cool it in the pan before slicing and serving.
Store the cake at room temperature and it will keep for a few days.
Boyfriend and I have found that we really enjoy eating the cake while it is still a bit warm because the edges have an extra crispy chewiness, much like the brownie edges.
