Nutella Coconut Bread is an easy quick bread recipe that’s lightly chocolatey with chewy bits of coconut baked inside.
February 5th was National Nutella Day. Unfortunately, I didn’t get a chance to make something, but I saw several Nutella recipes. A recipe for Nutella coconut bread from Cathy Shambles at Showfood Chef sounded delicious and easy to make.
Ingredients
- All-purpose flour
- Brown sugar
- Baking powder
- Toasted coconut
- Large egg
- Nutella
- Milk (fat free milk or whole milk)
- Vanilla extract
What I like about this Nutella bread is that it doesn’t have any bananas in it. I love banana bread, but I really love Nutella and didn’t want the flavor of ripe bananas masking the chocolate hazelnut spread.
Recipe Steps
Sift the flour, sugar, baking powder, and salt into a medium bowl. Stir in the toasted coconut.
Beat the egg, milk, Nutella, and vanilla in a large bowl with an electric mixer. Fold the dry ingredients into the wet mixture until just combined. The batter will be thick.
Transfer the batter to a prepared loaf pan. Bake the bread for about 55 minutes at 350°F.
Leave the bread in the pan for a few minutes before turning it out onto a wire rack to cool completely.
Recipe Tips
- Wait to slice the bread until it’s cooled to room temperature.
- It will keep at room temperature for a few days if it’s tightly wrapped in plastic wrap.
- You can also store it in the freezer for up to two months.
This Nutella coconut bread has a creamy chocolate taste, but the chocolate flavor is very light. The coconut also adds a chewy texture. I prefer my Nutella swirl bread, but this one is good if you want a hint of Nutella.
