Cheesy Beer Bread

This homemade beer bread recipe is fluffy and lightly flavored with beer and cheese. It’s an easy recipe that only requires one bowl and you don’t need a mixer.

I found a recipe for cheesy beer bread on Frenchie TBD that looked simple and savory. I decided to make it for a BBQ we were having. I’ve made cheese beer bread before, but the recipe I used last time didn’t fare well after the bread had cooled, turning quite dense and tough.

This recipe is easy to make, and I enjoyed the flavor and texture. I usually make sweet quick bread recipes, so I was happy I enjoyed this savory version. Unfortunately, most of my family didn’t seem to care for it, but that meant there was more homemade bread for me.

Ingredients

  • All-purpose flour
  • Baking soda
  • Baking powder
  • Salt
  • Shredded cheese
  • Beer
  • Olive oil

Cheese: You can use your favorite kind of shredded cheese for this recipe, but choose one that has enough flavor that you’ll taste it once the bread is baked. Cheddar cheese, pepper jack cheese, or gruyere cheese are good choices.

Beer: I think a lighter-style beer, like a lager, works better for this recipe. Choose one that you like to drink.

Recipe Steps

First, the flour, baking soda, baking powder, and salt are whisked in a large mixing bowl. Then you mix in the cheese.

Mix in the beer and stir until the batter is just combined, and then mix in the oil.

Transfer the batter to a 7×3″ loaf pan and sprinkle the rest of the shredded cheese over the top.

Bake the cheese beer bread for about 50 minutes or until a toothpick comes out clean. Allow the bread to cool for at least 30 minutes before slicing and serving it.

Recipe Tips

This recipe works best in a 7×3″ loaf pan. I used a bigger one, and my bread came out flat. I prefer it with a domed top, so next time, I’ll use the correct pan.

The original recipe includes some herbs, but I didn’t have any on hand, so I left them out. The bread does look pretty with the little flecks of herbs, so next time, I will use some.

Once the bread is cooled, you can wrap it in plastic wrap and store it at room temperature. It will keep for a few days at room temperature.

You can freeze it, too. Wrap it in plastic and then place it in a freezer bag. It will keep well for two months in the freezer.

Ingredients

  • 2 1/4 cup all purpose flour
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1 1/2 tsp salt
  • 3/4 cup + 2 tbsp shredded cheese
  • 12 oz bottle of beer
  • 1/4 cup olive oil

Instructions

  • Preheat the oven to 375°F. Grease a 7 x 3 loaf pan.
  • Whisk together the flour, baking soda, baking powder, and salt. Mix in the 3/4 cup cheese. Add the beer and mix until just combined. Mix in the olive oil, at this point there should be no more dry flour left in the bowl. Pour the batter into the loaf pan and sprinkle with the remaining cheese.
  • Bake for 50-55 minutes until a tester comes out clean. Let it cool on a rack for at least 30 minutes before serving.

  1. I made this today for my boyfriend and used Bell’s Winter Ale. Holy beejeezus!! Sooo good! And so easy too 🙂

  2. I used cheddar cheese. I usually use whatever beer I have available. I haven’t made this bread enough times to experiment whether different beers affect the flavor of the bread that much, but I would imagine a stronger, more flavorful beer would have some sort of effect. I love how easy this recipe is to make. I’m still afraid to make real yeast bread recipes. This is like baby steps into that world. =)

  3. i always wanted to try this out and i think i will soon. do you recommend any type/brand of beer that you’ve found goes best? and what kind of cheese did you use? cheddar sounds good. herbs too! haha already getting hungry, so i better get my fat butt in the kitchen
