Keto Microwave Peanut Butter Bread

This keto and low carb bread is super easy to make. All the ingredients are mixed in a mug and the bread cooks in less than 2 minutes in the microwave. Even though the bread is flourless, it has a texture just like regular bread. It works great for open face toasts or small sandwiches.

This bread recipe couldn’t be easier. It’s basically a microwave version of my flourless peanut butter bread. I got the idea from my keto mug bread recipe.

The bread comes out incredibly soft, has a light peanut butter flavor and is not sweet. Once cooked, you can slice it into small rounds. The bread slices can be eaten as is, toasted, spread with your favorite nut butter, used for mini sandwiches, etc.

Choosing a Mug

You will need a microwave-mug that holds at least 16 oz of liquid to make this recipe. I recommend sticking to a standard shaped mug. Using an unusually tall and narrow mug or a short and extra-wide mug can greatly affect cooking time. My mug measured a little over 4 inches in height and about 3 3/4 inches wide. The bread completely filled the mug when it finished cooking.

Cooking Tips

  • Use a mini whisk to mix all the ingredients together. Make sure to thoroughly whisk all of the egg into the batter. It can be difficult to see the egg whites once they are covered in peanut butter so lift your whisk from the batter a few times to check.
  • Most newer microwave ovens in the US range between 1000 watts to 1200 watts. I found that this is too powerful and overcooks the bread slightly, resulting in some sections turning slightly hard. So for this recipe, you will need to adjust the cooking power so that it only cooks at 800 watts.
  • Even with setting the wattage, some microwave ovens cook a little faster than others and the temperature of your batter and thickness of the mug can all affect cooking time. So you may need to cook a little longer or a little shorter time.

Do I need to use vinegar?

Yes this recipe needs vinegar. No you will not taste the vinegar. The vinegar is there to activate the baking soda. After much testing, I found that this combination of vinegar and baking soda yields the best rise to form a bread-like texture. I did try with baking powder but the texture just wasn’t the same.

How to Serve the Bread

Once the bread is finished cooking, you should be able to lift the entire thing out of the mug in one piece by sliding a spoon to the bottom of the bread and lifting it up.

The bread can then be sliced with a bread knife into 1/2 inch thick rounds. You can eat the bread as is. I also like to toast it and spread butter or almond butter. I also use it for making avocado toasts. It also works well as sandwich bread.

Ingredients

  • 1/3 cup creamy unsweetened natural peanut butter
  • 1 large egg
  • 1 tsp vinegar
  • 1/4 tsp baking soda
  • 1/4 tsp erythritol granular
  • 1 tbsp water

Instructions

  • Add all ingredients into a microwave-safe mug that can hold at least 16 oz of liquid. Mix with a mini whisk until thoroughly and evenly combined and no egg streaks remain.
  • Microwave at 800 watts for about 1 minute and 30 seconds or until bread is cooked.
  • Let bread cool slightly before removing from the mug. To remove the bread, slide a spoon to the bottom of the bread and lift the entire thing out in one piece. Use a bread knife to slice into 1/2 inch slices. Enjoy bread as is, or toast or make sandwiches with it.

Notes

  • Use a standard shaped microwave-safe mug that can hold at least 16 oz of liquid. Don't use an unusually tall and narrow mug or a short and extra-wide mug  because this can affect cooking time. My mug measured a little over 4 inches in height and is about 3 3/4 inches wide. 
  • Most newer microwave ovens in the US range between 1000 watts to 1200 watts. This bread needs to cook at a lower wattage, otherwise sections of it will overcook and become slightly hard. Make sure to adjust your cooking power level so that it cooks around 800 watts.
  • I was able to get six slices of bread measuring about 2 1/2 inches in diameter and 1/2 inch thick.
  • Do not leave out the vinegar. The vinegar is needed to activate the baking soda which allows the bread to rise. 
  • The estimated nutrition carbohydrates count excludes sugar alcohols. The net carbs excludes both fiber and sugar alcohols.

    And how much sugar would I use in place of it if I’m not on a keto or reduced sugar diet?

    • Erythritol granular is a type of sugar substitute. We haven’t tested this recipe with regular sugar because it’s keto, but we have a Peanut Butter Bread recipe that makes a regular-sized loaf that you might like.

  4. LOVE this recipe! Love, love, love! I love that it looks, tastes and has the chew factor of bread. I love how you can make a real sandwich with whatever you want and it won’t crumble or break like almond/coconut flour recipes do… plus, it doesn’t require toasting because it’s already a lovely brown color! I love how easy it is to slice. Lastly, I love how ridiculously simple it is to make. Tonight I’m using it for garlic cheese toast.

  6. Made this bread using liquid stevia, 80% power, and added 20 seconds because I have a 1000 watt microwave. Came out perfectly.  I will use silicon microwave safe bread pan next time.

  11. I’ve been Keto for 5 years and this recipe is awesome. Well done. I subbed in Tahini, and was worried about the carbs but it all worked out well and didn’t spike my blood.

  12. So far as I can find out, 1/3 of a “cup” is about the same as 3 heaped tablespoons, or 4.5 flat tablespoons.

    Does this seem about right to you? Different sources give different volumes for “1 cup”, anything from 200 ml to 400 ml, so it’s not easy to guess at what’s meant when a recipe uses “cups” as a quantity.

    Looking forward to trying this out, though. I love nut-butter bread, but a whole loaf does take a lot of making.

    • 1/3 cup is equal to 5.3 tbsp (using US tbsp). I’m not sure where you are coming from, so the spoon measurements may be different which is likely why you are getting different numbers

    • Probably a bit late to reply, but I just found this recipe and your comment. This site seems to use standard U.S. measurements. In U.S. recipes a ‘cup’ is 8 ounces, which is 240 ml. (this is for liquid ingredients)

      1/3 of a cup for non-liquid ingredients is 5Tablespoons + 1 teaspoon -those are standard U.S. measuring spoons, I think measuring spoons in the UK and/or Australia are not the same size. The best way to measure a third cup of something like peanut butter is to buy a set of nesting measuring cups from the U.S. They usually come in a set with a cup, half cup, third cup, and quarter cup and are meant for measuring ‘dry’ ingredients (which includes things like peanut butter, marshmallow creme, cheese spread.)

  13. OMG!! You can’t even IMAGINE how happy this has made me! No more fussing around with flour and extra ingredients! I made this and it’s fantastic! I’m making hamburger buns tonight!

  14. I made this and my microwave is 950 watts which meant I needed to do it at 90% power for the 90 seconds. It worked!
    My mug measured same as indicated but it flowed over the top a bit. I really whisked it well and it fluffed up a bit while mixing. I mixed in a bowl first which helps incorporate all ingredients. I added to mug after whisking. 
    I used almond butter. No almond butter taste, no sweetener taste, etc. Guess it tastes like bread. 🙂

    Let me preface this by saying I have not eaten bread in about 17 years (diabetic, celiac, thanks for asking) and I have tried EVERY recipe that exists for bread substitutes and have always been left so disappointed. Nothing tastes like bread. This. Tastes. Like. Bread! There is just a whiff of peanuts, but the consistency is just like a nice rye bread. I am going to try it out with almond butter tonight, just because I am out of peanut butter. I’ve made it that many times!

    One caveat, you can’t double the recipe and double the cooking time. Cook half in the micro at a time or you’re gonna have a bad day. I also did not add the sweetener. I found that even the fakey ones affect my blood sugars, so I don’t use them and I think the bread tastes fab!

  18. This is simply witchcraft. My 800W British microwave did this in 2 minutes perfectly. I can’t stop smiling as I just ate some bread again. 🙂 Just as you say. No vinegar taste. Only a slight peanut butter taste. Just amazing. Thank you! Bacon sandwiches are back.
