2 Ingredient Quick Bread

This super easy sweet quick bread is just 2 ingredients. And you can easily make different flavors. It’s a great bread to bake when you have minimal ingredients on hand.

This bread, sometimes referred to as ice cream bread, is made with just ice cream and self-rising flour (and if you don’t have self-rising flour you can easily make your own). I have been making this recipe for years and thought this would be a good time to share it.

Ingredients

  • Full Fat Ice Cream (any flavor of your choice)
  • Self-Rising Flour (or you can make your own with all purpose, baking powder and salt)

Why it Works

Ice cream contains ingredients like eggs and dairy, which are ingredients usually needed to make a quick bread. So the bread works by basically using the ingredients contained in the ice cream.

Best Type of Ice Cream to Use

For the ice cream, you want to stick with something that is full fat. This is because the recipe is using the ingredients in the ice cream to create the bread. You can choose whatever flavor ice cream you prefer. I like using a strong flavor because that flavor is then tasted in the bread itself.

So if you use chocolate ice cream, your quick bread will taste like chocolate bread. My favorites so far have been chocolate, pumpkin pie and salted caramel.

This simple quick bread is made with just ice cream and self rising flour.

Ingredients

  • 3 (packed) cups full fat ice cream
  • 2 ¼ cups self-rising flour (see note for making your own)

Instructions

  • Preheat oven to 350°F. Grease or line the interior of an 8 inch x 4 inch loaf pan.
  • Add ice cream to a large mixing bowl. Let ice cream melt and come to room temperature. You can also soften it for a few second in the microwave to speed up the melting process. Stir in the flour until thoroughly combined. Your batter should be thick.
  • Pour into prepared baking pan. Bake for about 60-65 minutes, or until toothpick inserted comes out clean. Let bread cool fully before slicing and serving.

Notes

  • Please make sure to use full fat ice cream as the recipe relies on the ingredients used to make the ice cream for the recipe.
  • Try to choose a strong flavored ice cream like chocolate or caramel. If you choose a more subtle flavor, your bread will come out more plain.
  • When measuring the 3 cups of ice cream, scoop out unmelted ice cream and pack it into the measuring cup.
  • If you don't have self rising flour, mix together 2 1/4 cup all purpose flour, 3 tsp baking powder and 3/4 tsp salt

  3. Haven’t tried it yet, but wondering if I can count a pint of ice cream as two cups without measuring, or does the ice cream go into the pint container as liquid measurement and therefore slightly different?

  5. This looks great! I am wondering if it would make a good easy sandwich type bread. I know I would have to use a really mild ice cream so it would not be too sweet. Suggestion of what flavor?     • The bread works best with full-fat ice cream – as far as low sugar if you try that your bread won’t be as sweet. We haven’t tried it, so let us know how it worked for you.
