I have been eating a lot of King Oyster mushrooms lately. I like different kinds of mushrooms and King Oyster mushrooms are one of my favorites because they have a chewy and meaty texture. They are great to use in stir-fry recipes like this one.
The mushroom is mainly a giant stem. I have used these mushrooms in various dishes such as noodle soup, sauteed with other types of mushrooms, and also stir-fried.
I like this stir-fry because it’s really easy to make. So if you want a quick dinner idea, it’s a good one to try.

Recipe Tips
You can find king oyster mushrooms at Asian markets, but any kind of mushroom will work in this recipe.
You don’t have to use a wok, but be sure to use a large pan so there is plenty of room to stir the ingredients.
This is a really simple stir-fry that you can add other things to change the flavors. Soy sauce, other stir-fry vegetables like onions, peppers, and snow peas, and fresh herbs like fresh parsley or cilantro.
If you want to add protein, try chicken, shrimp, or steak. You can use leftover meat or cook it first before making the stir-fry.
