This low carb and keto-friendly vanilla cake cooks in just 1 minute. The cake comes out fluffy, moist and sweet. You only need four ingredients and less than five minutes to make it.
With the weather starting to warm up, I’m trying to make more desserts that don’t require turning on my oven. I love making mug cakes when I’m short on time and am craving something sweet.
Ingredients
- Superfine Almond Flour
- Egg
- Granular sugar alternative
- Vanilla
Superfine Almond Flour: I recommend using blanched superfine almond flour. You want to use superfine almond flour because the texture is finer and more like flour. Using blanched almond flour will also help with the appearance of the cake. If you need a substitute for almond flour, I have a mug cake made with coconut flour.
Egg: The egg is used to provide structure for the cake. It helps the cake rise and also binds the flour together so that the cake crumb is not too loose. I do use egg for a lot of my keto mug cake recipes because it acts as a binding agent. If you need an eggless keto mug cake, try my keto brownie mug cake.
Granular Sugar Alternative: I use Lakanto Classic Monk Fruit Sweetener or Erythritol granular. Other similar granular sugar alternatives should also work.
Vanilla: Vanilla is used to provide the vanilla flavoring for this cake.
How to Make Keto Vanilla Mug Cake
All the ingredients are added to a microwave-safe mug. The ingredients are then whisked together until the batter is uniform. The cake then cooks in the microwave for about 1 minute. Let the cake cool and it’s ready to be eaten. You can also top with some whipped cream or frosting before serving.
Tips
It’s best to cook this cake in an oversized mug because the cake will rise high while it is cooking before settling back down once it is done.
If you want to make a nicer presentation, you can serve the cake in a smaller mug or plate once it is done cooking.
You do not need to grease the mug before adding the ingredients. The cake will pull away from the sides of the mug.

Keto Vanilla Mug Cake
Ingredients
- 1/4 cup (28 g) superfine blanched almond flour
- 1 tbsp (12 g) Lakanto Classic Monk Fruit Sweetener or Erythritol Granular
- 1 large egg
- 1/4 tsp (1 ml) vanilla
Instructions
- Add all ingredients into a large microwave-safe mug. Mix with a small whisk until the batter is uniform and the egg is completely beaten and incorporated into the batter.
- Cook the cake in the microwave at full power for about 1 minute. Cooking time may vary depending on your microwave wattage. My microwave is 1100 watts.
- Let cake cool a few minutes before consuming. You can plate the cake in a smaller plate or mug before eating. You can also top cake with your favorite frosting or whipped cream.
Notes
- The cake will only fill about 1/3 to 1/2 of a large mug when it is done. However, you do want to use a large mug to cook it because it rises high while it is cooking before it settles back down.
- So you can see the cake more clearly in the photos, I made double the recipe and plated the cake in a smaller mug for the pictures.
- Make sure the egg is thoroughly beaten otherwise your cake will not turn out right.
- If you do not want to use a microwave, you can try baking the cake in the oven at 350F for about 15-20 minutes.
- This cake is lightly sweetened. If you prefer sweeter desserts, you can add 1 tsp extra sugar substitute to the batter. Or you can top the cake with a sweet frosting.

Great emergency dessert for those days when you need something sweet and fast. I made it in one of those soup bowls with a handle so there was plenty of room for the cake to rise. I just ate it plain but it would be better with some berries and whipped cream.
