3 Ingredient Crispy Peanut Butter Oatmeal Bars (No Flour, Eggs or Butter)

These healthy peanut butter oatmeal bars are crispy and crunchy. They are very easy to make and need just 3 ingredients. They don’t contain any flour, eggs or dairy butter. The oatmeal bars take only about five minutes to prepare and are great for breakfast or a snack.

Unlike most oatmeal bars which are usually soft, these oatmeal bars are crispy. They are firm, but not hard and you can easily bite through. I love eating them for a healthy snack.

Ingredients

  • Peanut Butter
  • Quick Oats
  • Maple Syrup

Peanut Butter: This recipe uses natural unsweetened peanut butter. Make sure to use natural peanut butter. This is peanut butter that has nothing but salt and peanuts in the ingredient list and doesn’t contain any added oils.

Quick Oats: This recipe works best with quick oats to achieve a crispy texture. Your oatmeal bars will not be as crispy if you use rolled oats. Quick oats are oats that have been further processed so they are thinner, smaller and cook faster. They do not have anything added to them like sugar or flavoring.

Maple Syrup: These oat bars are made with pure maple syrup. The maple syrup adds a little bit of sweetness but is also mainly used because it helps to crisp up the oat bars.

How to Make Crispy Oatmeal Bars

The peanut butter and oats are first mixed together. Then the maple syrup is added and mixed in until a thick dough forms. The dough is spread into your prepared baking pan and then it’s ready to bake.

Oatmeal Bar Texture

These oatmeal bars have a delicate crispy texture. They are not super firm or hard crunchy like some oat bar products you can buy. They are also only lightly sweetened. If you prefer crispy oatmeal cookies, I have a cookie version too.

Ingredients

  • 1/2 cup + 2 tbsp (160 g) natural unsweetened peanut butter
  • 1/2 cup + 2 tbsp (58 g) quick oats
  • 2 1/2 tbsp (37 ml) maple syrup

Instructions

  • Preheat oven to 350°F (177°C). Line an 8 x 4 inch baking loaf pan with parchment paper.
  • Add peanut butter and oats to a large mixing bowl. Mix with a spatula until oats are fully incorporated. Add in maple syrup. Stir until syrup is fully incorporated and a thick dough forms. Taste the dough and if you feel it is not sweet enough you can add another tablespoon of maple syrup.
  • Spread dough evenly into the prepared pan. Apply some light pressure with a spatula or your fingers across the surface to help compact the dough. Use the back of a metal spoon to smooth and even out the surface.
  • Bake bars for about 14 minutes or until they look done. The edges should also turn lightly brown. Let bars cool completely before cutting. Use a large sharp knife to cut bars. Uneaten bars can be stored in an airtight container. 

Notes

  • Make sure to use natural peanut butter (no oils in the ingredient list).
  • This recipe works best with pure maple syrup and not honey. 
  • The bars are only lightly sweetened. If you prefer sweeter, you can taste the dough and add more syrup.
  • These bars are lightly crispy. They are not hard crunchy.
