2 Ingredient Healthier Fudge (No Dairy, Butter or Oil)
This healthier fudge is so smooth and creamy. It only needs 2 ingredients and doesn’t require any dairy, butter or oil. The fudge is made with a hidden healthy ingredient that you won’t taste at all.

This fudge is so soft, creamy and rich. I especially love that it contains a surprising hidden healthy ingredient that you won’t taste, but adds to the creamy texture of this fudge.

- Dark chocolate
Cauliflower: Cauliflower is the surprising healthy ingredient used in this fudge. Cauliflower has a very mild flavor so you won’t taste it when mixed with the dark chocolate. The cauliflower is steamed until soft and pureed in a blender, creating a creamy, smooth texture. You must use fresh cauliflower for this recipe because frozen cauliflower contains too much moisture. In addition, the cauliflower should be steamed and not boiled. Boiling the cauliflower will cause it to absorb too much water during cooking.
Dark chocolate: I recommend dark chocolate chips with around 60 to 63% cocoa. The fudge will not set with chocolate that contains less than 60% cocoa. If you need the fudge to be dairy-free, make sure to use dairy-free dark chocolate chips.
How to Make Fudge
- The cauliflower florets are steamed until very soft. Add the cauliflower to a blender and blend until it is a mostly smooth puree.
- Add chocolate chips to a microwave-safe mixing bowl and heat in 30 second intervals, stirring in between, until the chocolate is melted and smooth. Add chocolate to the blender and blend until you have a smooth mixture.
- Transfer the fudge to your prepared loaf pan. Place into the fridge for several hours or overnight to set. Once the fudge is set, cut with a large sharp knife.
Expert Tips
- The fudge is just firm enough to cut if you use 60% cocoa dark chocolate chips. If you prefer a little firmer fudge, you can use 63% cocoa but your fudge won’t be as sweet. If you use chocolate with less than 60% cocoa, the fudge will be too soft to cut.
- The cauliflower should be steamed until tender and not boiled. Cauliflower that is boiled will absorb too much water during the cooking process. This recipe also requires fresh cauliflower and not frozen because frozen cauliflower has too much moisture.
- It is best to puree the cauliflower first before adding the chocolate. Depending on your blender, you may be able to achieve a fully smooth puree. If your puree is not fully smooth, do not add water to smooth it. You should be able to blend it smooth once the melted chocolate is added.

Ingredients
- 2 cups (214g) cauliflower florets (must be fresh and not frozen), see note before starting
- 2 cups (344g) dark chocolate chips, 60-63% cocoa, see note before starting
Instructions
- Line a 8 x 4-inch loaf pan with parchment paper, leaving a little overhang for easy removal later.
- Add 2 inches of water to a medium pot and bring to a boil over medium-high heat. Place the cauliflower florets in a steamer basket and set it over the pot (the water should not touch the basket). Cover and steam for 10-12 minutes, until the cauliflower is very soft and easily pierced with a fork. It's important to steam the cauliflower and not boil it or let it touch the water because the cauliflower will absorb too much water if it is cooked in the water. Let cool for about 15 minutes so excess steam can escape. If you own an Instant Pot, you can also steam the cauliflower in the Instant Pot for about 2 minutes (using same method of adding water to the inner pot and placing the cauliflower in a steamer basket, making sure it doesn't touch the water).
- Meanwhile, add the chocolate chips to a microwave-safe bowl and heat in 30-second intervals, stirring between each with a silicone spatula, until chocolate is fully melted and smooth.
- Transfer the cauliflower to a high powered blender and blend until mostly or completely smooth, scraping down the sides a few times as needed to help the blender blend. Do not add any water. Some types of blenders will be able to blend the cauliflower fully smooth and some will not be fully smooth, but should be mostly mashed cauliflower consistency. You should have 1 cup of mashed/pureed cauliflower.
- Add the melted chocolate to the blender. Blend until completely smooth, with no visible chunks of cauliflower remaining, scraping down the sides as needed to ensure everything is evenly incorporated.
- Transfer the fudge mixture to your prepared loaf pan. Use an offset spatula to smooth it evenly across. You can also make a pattern on the surface for decoration if desired. Refrigerate the fudge for at least 4 hours or overnight to allow the fudge to set.
- Once fudge is set, lift the fudge out of the pan and cut into approximate 1-inch squares with a sharp knife. Store any uneaten fudge in an airtight container in the fridge. Refrigerated fudge should be able to be stored for around 1-3 days.
Notes
- Cauliflower note: It is best to measure cauliflower with a kitchen scale because it's difficult to get an accurate cup measurement. If you are using measuring cups, it's best to measure the cauliflower again after it is has been pureed. You should have 1 cup of mashed/pureed cauliflower.
- Chocolate note: This fudge should be made with dark chocolate chips that contain around 60%-63% cocoa. Anything less than 60% does not set well. Avoid using chocolate that doesn't contain lecithin (such as Enjoy Life brand). Lecithin helps the chocolate stay smooth and the fudge stay creamy. If you need the fudge to be dairy-free, use dairy-free dark chocolate chips.
