Pancakes and bacon together in one breakfast treat! These bacon pancake strips are easy to make and perfect for brunch or weekend breakfasts.

What’s better than munching on a strip of bacon? How about munching on a strip of bacon embedded in a fluffy pancake?

I wish I could tell you I came up with this myself. But I didn’t. I found the idea here. One look and I knew I had to make it. It fits perfectly with my obsession for creative breakfast treats and my love for bacon and pancakes.

To make this super easy, I used precooked bacon strips from Costco and Bisquick pancake mix.

Bacon Pancake Strips

These bacon pancake strips are easy to make and a fun twist on a classic breakfast! Plus, you only need four simple ingredients.

Ingredients

  • 4 slices precooked bacon
  • 1 cup Bisquick
  • 1 egg
  • 1/2 cup skim milk

Instructions
 

  • In a small bowl mix together Bisquick, egg and milk. Mix until batter is smooth with a few lumps remaining.
  • Heat griddle or frying pan. Place strips of bacon about 2 inches apart. Cook for 1-2 minutes until bacon is crispy and close to the desired doneness. Spoon pancake batter on top of each strip so it covers the strip of bacon and outlines the outside of the bacon. When the pancake is done, flip to the other side to finish cooking. Serve while warm.
