This blood orange cake is very easy to make and a nice way to showcase the beautiful fruit. The batter takes just minutes to make with just a few ingredients and one bowl.
A while back I made this easy cake recipe. It’s a simple batter and you can top it with any kind of fresh fruit.
The batter is really simple to mix together and it’s probably the quickest cake recipe I’ve ever made. The soft cooked fruit complements the batter very well and I love the sugary, crunchy top. It’s so simple and I love to have a slice with a cup of tea.
I bought some blood oranges recently and so I decided to make the cake again and top it with blood oranges and some kumquats.
A Simple Blood Orange Cake Recipe
As I mentioned, this is not the first time I’ve made this cake but I haven’t gotten tired of it because you can change it up with different fruit so it’s different every time. You only need six ingredients to make it and only one bowl. I love that I don’t have to use a mixer either. You can easily mix the batter with just a spoon.
It’s basically a simple vanilla cake that you can bake in an 8” or 9” round cake pan. It takes just minutes to make the batter and then you can top it with fruit.
Ingredients
- Flour
- Baking powder
- Sugar
- Eggs
- Canola oil
- Vanilla
- Sliced blood oranges
- Sliced kumquats
- Raw sugar
Blood Oranges and Kumquat
Blood oranges are similar to regular oranges in flavor but have a dramatic dark red color instead of orange. Like other citrus, they are in season during the winter and early spring months. I think they are so pretty sliced and placed on the cake before you bake it.
Kumquats are small fruits that are part of the citrus family. The flesh is very sour so a lot of the time they are used to made jams or marmalade. I like them with this cake because when combined with the sweet batter and blood oranges the sour flavor is not as strong.
Recipe Steps
In a large bowl, combine the flour and baking powder. Add in the sugar, eggs, vanilla, and oil and mix to combine.
Pour the batter into an 8- or 9” cake pan and add in the batter. Batter will be quite thick, so use a spoon to smooth out the top.
Place fruit slices on top of the batter, pressing them into the batter. Sprinkle with raw sugar.
Bake the cake for 50 minutes or until a cake tester comes out clean.
This cake is great as a simple dessert or as a snack cake with a cup of coffee or tea.

- 2 blood oranges thinly sliced
- 4 kumquats thinly sliced

- Preheat oven to 350°F. In a large bowl, combine the flour, baking powder. Add in the sugar, eggs, vanilla and oil and mix to combine. Butter and flour an 8- or 9-inch cake pan and add in batter. Batter will be quite thick, so use a spoon to smooth out the top.
- Place fruit slices on top of the batter, pressing them into the batter. Sprinkle with raw sugar.
- Bake for 50 minutes until a cake tester inserted comes out clean.
