We all need an easy cake recipe and the one I’m sharing today is one of my favorites. You only need one bowl and a few minutes to make the batter.

As much as I like to tackle complicated baking projects, sometimes it’s just nice to be able to make a cake from scratch without a lot of work.

So, when I saw an easy cake recipe from Food Librarian, I had to try it. The cake just looked too easy to pass up. The batter takes just minutes to make and the cake is topped with fresh fruit before it goes in the oven.

I love baked fruit desserts like my Strawberry Cake, Cherry Cake, and Plum & Pluot Buckle so for this cake I decided to top it with fresh peaches, which I happened to have on hand.

Easy Cake Recipe with Peaches

What makes this peach cake so easy to make are the ingredients. It’s almost as easy as using a cake mix!

You don’t have to soften any butter or spend time whipping egg whites or creaming butter with sugar. Plus, you only need one bowl so clean-up is easy, too.

Ingredients

  • All-purpose flour
  • Baking powder
  • Sugar
  • Eggs
  • Canola oil
  • Vanilla
  • Fresh peaches
  • Raw sugar

Recipe Steps

All you do is combine everything but the peaches and raw sugar in a large bowl. The batter will be very thick so you will need to spoon it into a greased cake pan and then smooth the top with the spoon.

The part that took the longest for me (and it really wasn’t that much time!) was arranging the sliced peach in a pretty pattern on top of the batter. The combination of the peach with the cake is delicious, but you can substitute other kinds of fruit, too, like strawberries, blueberries, or plums.

Sprinkle the top of the cake with the raw sugar. It will create a crunchy, sugary crust on the cake while it bakes which is one of my favorite parts.

The cake needs to bake for about 50 minutes. When I baked my cake, the sweet smell of the cake filled my house.  I’ve baked a lot of sweets over the years but this peach cake was one of the best smelling desserts I’ve ever made.

Easy Cake Recipe with Peaches

This cake is the easiest cake I’ve ever made! The cake is not only pretty but also delicious. You can use different kinds of fruit, but I especially like how fresh peaches complement the cake.

Ingredients

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup canola oil
  • 1 tsp vanilla
  • 1 peach, thinly sliced
  • 1 tbsp raw sugar

Instructions
 

  • Preheat oven to 350°F. Butter and flour an 8 or 9-inch cake pan.
  • In a large bowl, combine the flour, baking powder. Add in the sugar, eggs, vanilla and oil and mix to combine. Batter will be quite thick.
  • Transfer the batter to the prepared pan and use a spoon to smooth out the top. Place peach slices on top of the batter, pressing them into the batter. Sprinkle the top of the batter with raw sugar.
  • Bake for 50 minutes until a cake tester inserted comes out clean.
