This blueberry banana bread is made with sour cream, bananas, and juicy fresh blueberries. It’s an easy quick bread that you only need one bowl to make. You can make it ahead and freeze it for later, too.
I’ve been making lots of different quick breads lately. I love making them because they’re usually very easy and you don’t need any yeast. I also like that you can serve them as a snack cake or dessert depending on the recipe.
This blueberry banana bread recipe is my latest experiment. I took my favorite sour cream banana bread and gave it a twist to include juicy fresh blueberries.
The combination of ripe bananas, sour cream, and blueberries creates a very moist and flavorful bread. I also love the bright pops of color from the blueberries.
Ingredients
- Unsalted butter
- White sugar
- Eggs
- Very ripe mashed bananas
- Sour cream
- Vanilla extract
- Ground cinnamon
- Salt
- Baking soda
- All-purpose flour
- Chopped pecans
- Blueberries
Recipe Instructions
This blueberry banana bread is just like making regular banana bread – it’s very easy and quick. Grease four 7×3″ loaf pans and preheat the oven to 300°F.
You only need one large bowl to make the batter. Start by creaming butter and sugar together with an electric mixer and then you just add all the other ingredients and mix until combined.
or the blueberries, I recommend tossing them in a tablespoon (or so) of flour before you fold them into the batter. The flour will keep them from sinking to the bottom of the bread.
Pour the batter into the prepared pans and bake the bread for about an hour or until a toothpick comes out clean.
Once the bread is cooled you can store it in an airtight container at room temperature or you can freeze the loaves.
Can I Use Frozen Blueberries?
You can use frozen blueberries, which is a good choice if fresh ones are out of season. I recommend thawing the berries first and draining off any excess liquid. You can thaw them in the refrigerator overnight or thaw them in a bowl of water before you make the bread.
Can I add Other Mix-Ins?
The nice thing about this recipe is that you can add other mix-ins if you want to change it up.
- Other fresh berries like chopped strawberries or raspberries work well.
- Add some lemon zest or orange zest to the batter. One tablespoon will add a nice citrus flavor.
- Switch out the cinnamon for ground nutmeg or cloves.
- You can also add chocolate chips.
- Instead of pecans try chopped walnuts or almonds.
Just be careful not to add too many mix-ins otherwise the bread won’t bake properly.
Can You Freeze Banana Bread?
Yes, you can freeze this bread! Just be sure to fully cool the loaves and then wrap them tightly in plastic wrap. Store them in a freezer-safe container (or resealable bag) and they will keep up to three months in the freezer.
To thaw, just leave the loaves out at room temperature for several hours before slicing.
Boyfriend really loved this bread. The blueberries add a lot of flavor and I love the pops of color when you slice the loaves.
