Craft Pizza Company, a modern artisan pizza restaurant, recently opened inside the UTC Mall food court. Normally, I wouldn’t be excited about a food court place opening, but Craft Pizza Company promises to be better than your typical food court offerings, hiring on a local chef, using organic and local produce, etc.
Pizzas are sold by the slice or by a whole pie. To get variety, we chose a few slices.
Carnitas (all natural mozzarella, roasted pork, organic tomatoes, red onion, cilantro & poblano chiles)
Of the four, this was my favorite. The roasted pork was smoky, flavorful, and unique. Unfortunately, the crust was another story. The thin crust, made of organic flour, had a dry and crumbly texture that I did not enjoy.
Truffle (truffle honey, all natural mozzarella, ricotta, roasted garlic, aleppo pepper & roasted mushrooms)
Normally I enjoy truffle anything, but this pizza didn’t work for me. The cheese tasted candy sweet with the drizzle of honey. And I don’t really like the pairing of savory truffle with sweet honey.
Combo (all natural mozzarella, Italian salami, spicy Italian sausage, Anaheim chiles, black olives, roasted cremini mushrooms & red onions)
Carnivore (all natural mozzarella, applewood smoked bacon, pepperoni & spicy Italian sausage)
Overall, we didn’t really enjoy the pizzas here. Perhaps they are better when you order fresh whole pies, but the reheated slices left the crust crumbly and dry.

Pizza seems to be exploding in SD. So many new places opening up!
