Flourless Nutella Banana Mug Cake

This flourless, gluten free mug cake is just 5 ingredients and cooks in 2 minutes in the microwave. It’s an easy dessert that will satisfy your sweet tooth.
Remember that Flourless Nutella Banana Bread I shared last month? Well here is my mug cake version! I’ve made quite a few blender flourless quick cake breads lately, including Flourless Nutella Banana Bread, Flourless Nutella Pumpkin Bread and Flourless Peanut Butter Banana Bread. And while they have all been delicious, my favorite has been the Flourless Nutella Banana Bread. There is just something so comforting about banana bread.

I probably shouldn’t admit this, but my husband and I finished the entire loaf in one day! Given our lack of self-restraint, I’ve been avoiding baking another one but it’s definitely been on my mind. Enter this mug cake. It’s so great for portion control. This makes one very large mug cake, perfect for one or two people. The best part is that it cooks in 2 minutes!

- 1/4 cup Nutella
- 1 large egg
- 1 medium ripe banana peeled and completely mashed
- 2 tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
Add all ingredients into an oversized microwave-safe mug (that can hold at least 16 oz of liquid; the one in the photo is a little smaller which is why the batter overflowed slightly). Mix vigorously with a small whisk until batter is smooth and egg is completely beaten into the batter.
Place mug in the microwave and cook for about 2 minutes at full power. The cake will initially rise quite high while cooking and then condense down once it stops cooking. Let cake cool a few minutes before eating.

Awesome recipe! I want to try this, but don’t have any bananas at home. Will one mashed avocado be a good substitute?
Unfortunately no. The recipe really is meant to be a banana and nutella cake so if you take away the banana, you take away the banana flavor. Also a lot of the cakes sweetness and texture comes from the bananas, and avocado won’t yield the same results.

please remove the peel of the banana before using it in the recipe
Came out great! Not too swert but still rich in flavor. Topped it with a scoop of vanilla ice cream!
