Ginger Spice Latte Mug Cake

Happy December everyone! I’m so excited to bake lots of holiday treats this month. Lately, I’ve been craving ginger spice treats. I’ve already made a ginger spice latte.

That immediately made me wan to try making a ginger spice latte mug cake.

Speaking of lattes, have you tried the new Verismo system from Starbucks? It’s their version of the single cup home coffee system that even makes Starbucks lattes by inserting a milk pod. I recently sampled it at Sur La Table and really enjoyed it.

Anyway, back to the ginger spice latte mug cake. This came out quite good. You can taste the ginger and the molasses. The only thing was that the coffee flavor is a little light.

  • Combine all ingredients into oversized mug. Stir with a small whisk or fork until batter is smooth.

  1. Definitely forgot the egg lol but it still came out great!

  2. Hi! This mug cake looks delicious!! Is there anyway I could make it without a microwave?

  3. I tried out this cake and the flavour is delicious, but it turned out kind of dense and gooey. Any suggestions?

    • This cake is a little dense but it shouldn’t be gooey. Yours might be a little undercooked. I’m still trying to work out getting rid of the denseness for the white cake based mug cakes. For the pb and Nutella ones, it’s doesn’t get really dense. If i figure out a way to improve the texture, I’ll post it.

  4. I’m all about the mug cake method in a pinch! Love seeing new and unique flavor combos =)

  5. i love mug cakes. this is such a festive take on them! yum!

  6. I have yet to test out the mug cake method, but this looks like a great place to start 🙂 Love a good ginger cake!
