Lime Mug Cake

This fluffy mug cake is scented with lime zest for a light and citrusy finish. It’s not too sweet and ready in less than five minutes.

I had a really fun weekend with some good friends visiting, but I didn’t have much time for baking. I couldn’t imagine ending the weekend without a baked good, so this 5 minute mug cake was the perfect solution.

Last week I had lunch with CC and she gifted me with some great food items, including a jar of lime curd. I immediately wanted to make a lime mug cake with it, much like my lemony mug cake.

I decided to mix it up a little, with this oversized wide-rimmed cup. It ended being the perfect size for this mug cake.

Lime Mug Cake

This fluffy mug cake is scented with lime zest for a light and citrusy finish. It's not too sweet and ready in less than five minutes.

Ingredients:

  • 4 tbsp all- purpose flour
  • 1/4 tsp baking powder
  • 2 tsp granulated sugar
  • 3 tbsp fat-free milk
  • 1/2 tbsp vegetable oil
  • 1/2 tsp fresh lime zest
  • 1 tbsp lime curd

Directions:

  1. Combine all ingredients except lime zest into an oversized microwave-safe mug. Mix with a small whisk until batter is smooth. Stir in lime zest.

  2. Cook in the microwave for about 1 minute. Let cake cool a few minutes before eating. The cake is best consumed while still warm or within a few hours of it being cooked.

  1. Oh yay! Now I know what to do with the lime curd!  My husband and daughter like sour desserts more than me so this is perfect! : )

    • i hope they like it! thanks again for the jar! i loved using the lime curd this way. and the lime zest makes it more lime-y flavored, giving it that slight tartness because the curd is pretty sweet
