This easy recipe makes one thick and peanut buttery cookie in just minutes.
I had so much fun making my single serving Nutella cookie. So of course I had to experiment with more versions, starting with a peanut butter one. This cookie bakes up very thick and is packed with creamy peanut butter. I definitely recommend a glass of milk with this one!
Single Serving Peanut Butter Cookie
Ingredients
- 1 1/2 tbsp creamy peanut butter store bought
- 2 tbsp all purpose flour
- 1 tbsp packed brown sugar
- 1/8 tsp baking soda
- 1 tbsp plain nonfat greek yogurt
- 6 chocolate chips optional
Instructions
- Preheat oven to 350°F. In a small mixing bowl, mix peanut butter, flour, baking soda, sugar and yogurt with a spoon until the dough comes together and everything is fully mixed. Roll dough into a disc and (if using) press chocolate chips on top. You can also make grid marks with a fork if you are not using chocolate chips.
- Place cookie on a baking sheet lined with Silpat mat or parchment paper. Bake about 10 minutes. Let cookie cool for a few minutes and firm up before eating.

I agree! Chewy and thick is best. this one isn’t as chewy as I’d like. I think you’d need to up the brown sugar, but I didn’t want to make it too sweet.
