These cookie bars combine three classic cookies in one decadent treat. Peanut butter, chocolate chip, and chocolate cookie dough make up the three layers.
Chocolate chip? Double chocolate chip? Or peanut butter? Now you don’t have to choose. You get all three in this cookie bars recipe. I told you I would be introducing more cookie bar recipes to my blog. You didn’t think I’d just leave off with those decadent, calorie crazy Ultimate Cookie Bars did you?
I call these my triple threat bars because they combine three of my favorite cookies. They do take slightly more time than my other bar cookies have taken. But it results in one yummy treat.
Three Cookies in One Dessert Bar
For this recipe, you make three separate cookie doughs – a chocolate chip, a chocolate dough, and a peanut butter dough. You make each one separately so you can layer the bars.
The ingredient list looks long but many of the ingredients are repeated in each layer. I’ve made these several times and the process is pretty easy.
- First you make the chocolate chip cookie dough and then spread it into the bottom of a 9×9 lined pan.
- Bake the chocolate chip layer until the dough is almost baked through. While it bakes, you can make the chocolate cookie dough.
- Spread the chocolate layer over the top of the chocolate chip one and then bake the two layers until the chocolate layer is almost done.
- Make the peanut butter layer and then spread it over the chocolate one. Bake the bars until golden on top and then let them cool in the pan before slicing.
I didn’t have enough time to let these cookie bars properly set before this photo, which is why they look a little gooey. Once sliced, you can see all three layers.
Be sure to store the bars in an airtight container. They should keep well for a few days. I think these are great for parties, potlucks, and BBQs. If you love cookies you have to try them.

Triple Cookie Bars
Ingredients
For the Chocolate Chip Cookie Layer
- 1 stick 1/2 cup butter
- 1/2 cup granulated sugar
- 3/8 cup packed light brown sugar
- 1 large egg
- 1/2 tbsp vanilla
- 1 3/4 cup all purpose flour
- 1/2 tsp kosher salt
- 1/2 tsp baking soda
- 1 cup semi sweet chocolate chips
For the Chocolate Cookie Layer
- 1 stick 1/2 cup butter
- 3/4 cup granulated sugar
- 1 large egg
- 1/4 cup unsweetened cocoa powder
- 1 1/8 cups all-purpose flour
- 1/8 tsp salt
- 1/2 tsp baking powder
For the peanut butter cookie layer
- 1 1/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 stick 1/2 cup butter
- 1 cup creamy peanut butter
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tbsp milk
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat oven to 350°F. In a stand mixer, beat the butter and sugars with the paddle attachment until light and fluffy (about 2-3 minutes). Add egg and vanilla, continue to beat until well combined.
- Whisk flour, salt and baking soda in a medium bowl. Add to bowl of stand mixer and mix on low speed until combined. Add in chocolate chips and mix again for a few seconds until chips are spread evenly throughout the batter.
- Line the bottom of an 9 x 9 pan. Spread cookie dough along the bottom of the pan, pressing dough down until it is evenly distributed across the surface. Bake for 15-18 minutes or until cookie dough is almost cooked and set. Remove from oven to put on second layer
- While waiting for the cookie to cook, start on the chocolate layer. Cream the butter and sugar on medium-high speed until light and fluffy, about 2-3 minutes. Beat in the egg. Mix in the cocoa powder at low speed until well blended.
- Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated.
- Scoop dough and put it onto baking pan, on top of the chocolate chip cookie layer. Spread evenly across pan. Then place back in oven and bake about 15 minutes, until chocolate cookie layer looks almost done.
- While baking second layer, in a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, beat the butter and the peanut butter together until fluffy (about 2 minutes). Add the sugars and beat until smooth. Add the egg and mix until combined. Add the milk and the vanilla extract and mix again.
- Add the flour mixture and beat until flour disappears. Stir in the chocolate chips.
- Add dough to form top layer of cookie bar. Bake for 10-11 minutes, or until cookie bars are golden brown on top.
- Cool the cookies completely before cutting and serving.
