Triple Threat Cookie Bars

I told you I would be introducing more cookie bar recipes to my blog. You didn’t think I’d just leave off with those decadent, calorie crazy Ultimate Cookie Bar cookies did you?

These cookies do take slightly more time than my other bar cookies have taken. But it results in one yummy mess.

Triple Cookie Bars

Ingredients:

For the Chocolate Chip Cookie Layer

  • 1 stick 1/2 cup butter
  • 1/2 cup granulated sugar
  • 3/8 cup packed light brown sugar
  • 1 large egg
  • 1/2 tbsp vanilla
  • 1 3/4 cup all purpose flour
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 cup semi sweet chocolate chips

For the Chocolate Cookie Layer

  • 1 stick 1/2 cup butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsweetened cocoa powder
  • 1 1/8 cups all-purpose flour
  • 1/8 tsp salt
  • 1/2 tsp baking powder

For the peanut butter cookie layer

  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 stick 1/2 cup butter
  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Directions:

  1. Preheat oven to 350°F. In a stand mixer, beat the butter and sugars with the paddle attachment until light and fluffy (about 2-3 minutes). Add egg and vanilla, continue to beat until well combined.

  2. Whisk flour, salt and baking soda in a medium bowl. Add to bowl of stand mixer and mix on low speed until combined. Add in chocolate chips and mix again for a few seconds until chips are spread evenly throughout the batter.
  3. Line the bottom of an 9 x 9 pan. Spread cookie dough along the bottom of the pan, pressing dough down until it is evenly distributed across the surface. Bake for 15-18 minutes or until cookie dough is almost cooked and set. Remove from oven to put on second layer
  4. While waiting for the cookie to cook, start on the chocolate layer. Cream the butter and sugar on medium-high speed until light and fluffy, about 2-3 minutes. Beat in the egg. Mix in the cocoa powder at low speed until well blended.
  5. Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated.
  6. Scoop dough and put it onto baking pan, on top of the chocolate chip cookie layer. Spread evenly across pan. Then place back in oven and bake about 15 minutes, until chocolate cookie layer looks almost done.
  7. While baking second layer, in a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  8. In the bowl of a stand mixer, beat the butter and the peanut butter together until fluffy (about 2 minutes). Add the sugars and beat until smooth. Add the egg and mix until combined. Add the milk and the vanilla extract and mix again.
  9. Add the flour mixture and beat until flour disappears. Stir in the chocolate chips.
  10. Add dough to form top layer of cookie bar. Bake for 10-11 minutes, or until cookie bars are golden brown on top.

  11. Cool the cookies completely before cutting and serving.
