Bisquick chocolate chip cookies are an easy way to satisfy a cookie craving.
I always have a box of Bisquick pancake mix in my pantry. It’s great for whipping up pancakes in the morning when I don’t have time to make them from scratch. I also use it a lot to make other recipes like my bacon egg pancake cups or mini pancake muffins.
So, when I saw a recipe for Bisquick cookies on Plain Chicken I was intrigued. Why not use Bisquick to make chocolate chip cookies? So, I decided to give them a try.
Ingredients
- Softened unsalted butter
- Brown sugar
- 2 teaspoons vanilla
- Egg
- Bisquick baking mix
- Semi-sweet chocolate chips
- Chopped nuts (these are optional)
Three Easy Steps
The best part about these cookies is how easy they are. Using the mix means you don’t have to measure all of the separate dry ingredients. Plus, you can make the dough in one bowl for less clean-up.
All you do is mix the butter, sugar, vanilla, and egg. Add the mix, chocolate chips, and nuts and stir until the dough comes together.
I made small cookies by dropping two teaspoons of dough for each cookie onto a baking sheet. Bake them for 10 minutes or until they are browned and cooked through.
Recipe Notes
The cookies are good especially if you want to make a quick batch of cookies. Are they the best chocolate chip cookies? No, but I would make them again and tweak a few things.
Next time, I will increase the sugar and do half brown sugar and half granulated sugar so they’re sweeter. I would also reduce the amount of Bisquick so the cookies are less dry and spread more when they bake. I read some other reviews about the original recipe and others had the same ideas as I do to tweak the recipe.
If you make the recipe as is, I recommend flattening the dough balls before you bake the cookies. Since they don’t spread much you want them in a cookie shape before they bake.
I love experimenting with recipes and using Bisquick is definitely an easy way to make a batch of cookies. They’re great if you’re short on time and will satisfy a cookie craving.

Bisquick Chocolate Chip Cookies
Ingredients
- 1/2 cup unsalted butter softened
- 1 cup brown sugar packed (next time I will do half white and half brown)
- 2 teaspoons vanilla
- 1 egg
- 2 3/4 cups Bisquick baking mix I will remove 1/2 cup from this next time
- 1 cup semi-sweet chocolate chips 6 oz
- 1/2 cup nuts chopped, if desired (optional)
Instructions
- Heat oven to 375°F. In large bowl, mix butter, brown sugar, vanilla and egg. Stir in Bisquick mix, chocolate chips and nuts.
- Onto ungreased cookie sheet, drop dough by rounded teaspoonfuls about 2 inches apart; flatten slightly.
- Bake about 10 minutes or until golden brown. Remove from cookie sheet to cooling rack.

I quit using bisquick too, and make my own biscuits from White Lily Flour….but if I had any I would give these cookies a try tho….
But the comments don’t sound worth trying them tho.,,,

Hi, just joined this site today so haven’t had time to browse much nor cook anything …… however, I LOVE CHOCOLATE and chocolate chip cookies rank up there as my favorites…. The only choco. chip cookie recipe I use for years now is the Nestle Toll House recipe (on back of bag of chips). However, to save time and space when baking, I don’t make individual cookies (takes too long and don’t have much available counter/table space for them) – I make the bar version (also listed on the bag) – slightly different temp and time. You just spread the mixture in an ungreased (I use non-stick pans) baking pan then bake. They are awesome, moist but not undercooked/mushy, nicely browned, etc. Just cut them like brownies and enjoy. If using Bisquick, maybe try to compare these two recipes, especially the sugars – for better taste and browning. Also, I stopped using Bisquick and use King Arthur Baking Mix (it also comes in gluten free) – use interchangeably as Bisquick but this is made with King Arthur flour and other ingredients so much better overall.

I used half white and half brown sugar, I used all the mix that it called for but I added a about a 1/2 cup of milk so they would spread more . Got about 30 cookies .

Just made these and agree with you– they are good but not amazing. I also added some rolled oats. Thanks for the recipe, the use of bisquick inspired me.
Yeah I was really curious with the Bisquick. It was fun to try and was cool to see Bisquick used in this way, but not amazing.
