I love starting my weekends with pancakes and these 3 ingredient banana pancakes are perfect even when I’m feeling lazy. It’s such a simple easy recipe. Just mix up flour, eggs, and banana and your batter is ready to go.

  • Overripe bananas – the peels should be brown or mostly spotty. Overripe ones are easier to mash and they are also sweeter.
  • Large eggs
  • All-purpose flour or use gluten-free flour

This recipe has no added sugar. The bananas sweeten the pancakes but if you like your pancakes sweeter, I recommend adding up to a tablespoon of granulated sugar or you can pour some maple syrup over the top when you serve them.

You can also add other flavors like vanilla extract or some spices like ground cinnamon, nutmeg, or cloves.

Instructions

All you do is stir the mashed banana with the egg and flour in a large bowl.

The batter will be thick, which is fine. When you cook the pancakes, you may need to shape them into circles with a spatula.

I cook mine in a skillet over medium heat to medium-high heat with a little oil or butter. You can also cook them on a griddle. Once you spoon batter onto the hot pan, it bubbles up just like regular pancake batter. Once they are golden brown on one side, flip them over and cook them on the other side.

Tips and Variations

Be sure to mash the bananas so they are completely broken down without big chunks. Using ones that are very ripe will make this a lot easier. This will give your pancakes the best texture.

This recipe makes enough for one serving, but you can double it to make more batches.

If you want to make the pancakes ahead, you can. They freeze well. Let them cool on a sheet pan and then freeze them. Once frozen, keep them in a freezer bag. You can warm them up in the microwave, toaster oven, or regular toaster.

I loved the taste of these pancakes and I can’t wait to experiment with more variations. I think you could add your favorite chopped fruit like strawberries, blueberries, or raspberries. You could also add nuts or chocolate chips.

I still love my regular pancakes recipe, but these 3-ingredient banana pancakes are great when you don’t want to make a fuss.

3 Ingredient Banana Pancakes

These banana pancakes are so simple to make. Just three easy ingredients and the batter is ready to go.

Ingredients

  • 1 large overripe banana
  • 2 large eggs
  • 1/4 cup all purpose flour

Instructions
 

  • Whisk eggs and banana in bowl until no banana chunks remain. Whisk in flour until batter is thick and smooth. 
  • Spray frying pan with oil and turn stove to medium heat. Pour a small circle of batter on pan. When pancake begins to bubble, flip over to other side and cook until done. Repeat with rest of the batter.
