Microwave Egg White Omelettes
It’s the start of 2015, so I’m trying to share some healthy recipes, like this super easy microwave egg white omelet which you can even eat on-the-go.
I hope everyone had an enjoyable last few weeks. I’m having a hard time getting back into my usual schedule. We spent Christmas traveling and then kept it low key last week. I’ve spent a lot of my free time re-watching Friends on Netflix. I’m not sure why I am so excited that it is now available on Netflix. I actually own all the DVDs, so I could have watched whenever I wanted to, but I haven’t really watched it in years, except for occasionally catching it on tv.
I guess I’m not the only one watching. While going into a Starbucks the other day, I walked past a group of friends having a heated discussion and overheard one guy say “Joey is the kind of guy you marry, not Chandler.” I didn’t know if I wanted to laugh or to interject.
But Monday is now fast approaching so I guess I’ll have to put my binge watching on hold. I love making these egg white omelettes for breakfast during the work week. They are light, easy and you can change up the fillings. I like a lot of fresh, colorful vegetables. You can also prep everything the night before, enough for a few mornings worth, and then in the morning, you just add your ingredients, pop it in the microwave for about 1 minute and it’s ready to go.
Microwave Egg White Omelets
- 6 tbsp liquid egg white product
- 1-2 tbsp of milk
- 1 tbsp chopped spinach
- 1 tbsp chopped orange bell peppers
- 1 tbsp chopped red bell peppers
- 1 tbsp chopped broccoli
- 1-2 tbsp low fat or fat free shredded cheese
- salt and pepper to taste
You can tailor this to your tastes, adding different vegetables
Using a 6 to 8 oz ramekin, add egg white and milk and gently whisk. Add in remaining ingredients. Microwave for about 1 minute 30 seconds or until done.
