Mandarin Orange Chicken Quesadillas

Chicken quesadillas get an Asian-twist and are made with Mandarin orange chicken and fresh vegetables. They are easy to make thanks to a quick short-cut and a fun dinner for busy weeknights.

These quesadillas are a twist on chicken quesadillas and are perfect for back-to-school. Instead of Mexican-style quesadillas I gave them an Asian-twist with some mandarin orange chicken and the good news? You can use a super easy short-cut and use Crazy Cuizine Mandarin Orange Chicken to make them.

There are a few fresh ingredients like peppers, zucchini, and cheese along with the chicken and sauce that you just have to heat up to serve. It’s a quick and easy dinner idea.

  • Olive oil
  • Red and green bell pepper
  • Zucchini
  • Chopped scallions
  • Shredded cheddar cheese
  • Tortillas

It was so fun to come up with these Asian-style chicken quesadillas – they’re so quick to make, kid-friendly, and perfect for busy weeknights.

How to Make Mandarin Orange Chicken Quesadillas

Prepare the Chicken and Vegetables

Remove the chicken and sauce from the package. Heat the olive oil in a large skillet over medium heat. Cook the chicken in the oil until it turns crispy. Add the vegetables and cook them with the chicken until they have softened. Transfer the chicken and veggies to a bowl. If there are large chunks of chicken you will want to cut them into smaller pieces.

Prepare the Sauce

In a small saucepan, warm the sauce. Pour the sauce over the veggies and chicken and toss to coat them in the sauce.

Make the Quesadillas

Heat a large skillet over medium heat. Place a tortilla on the hot skillet and cook it on one side until it puffs up a bit. Turn the tortilla and cook it on the other side. Once it puffs up again, place some of the cheese on the tortilla, leaving a ¼-inch perimeter around the edges.

Once the cheese is melted, place some of the chicken and veggie filling on the cheese. Be careful to not add too much filling or your quesadilla will be overstuffed. Fold the tortilla over so it’s covering the filling. Turn the quesadilla over so that both sides are cooked.

Slice the quesadilla into wedges and garnish with chopped scallions.

These chicken quesadillas are warm, filling and flavorful and you barely need to break a sweat to make them. The whole meal can come together in 30 minutes or less, depending on how many people you’re feeding.

These Mandarin Orange Chicken quesadillas make a quick and tasty weeknight meal.

Ingredients

  • 1 (22-oz) box Crazy Cuizine Mandarin Orange Chicken
  • 2 tbsp olive oil
  • 1 red bell pepper chopped into small squares
  • 1 green bell pepper chopped into small squares
  • 1 small zucchini chopped into small pieces
  • 2 tbsp chopped scallions plus additional for garnish
  • shredded mild cheddar cheese about 1/4 cup for each quesadilla
  • 1 8-10 piece package tortillas of your choice

Instructions

  • Remove chicken from the box. Add olive oil to a large skillet and turn stovetop to medium-high heat. Once skillet is heated, add chicken. Cook and flip as needed until chicken breading is crispy. Alternatively, you can also heat the chicken in the oven at 400°F and then you don't need additional oil.
  • When chicken is almost crispy, add chopped peppers and zucchini. Cook until vegetables are done. Remove from stove and add chicken and vegetables to a large bowl. Add in 2 tbsp of scallions. For any large chunks of chicken, cut in half, so that they aren't too thick for your filling.
  • In a small pot, warm up the sauce. Pour sauce into chicken bowl and toss until chicken and vegetables are fully coated.
  • Choose a pan big enough to lay your tortilla on. Turn heat to medium. If desired, you can lightly brush your tortillas with olive oil but I omitted this step. If there is a side of your tortilla that is paler and meant to be the inner side, heat that side first. Once it begins to puff, flip to the other side. Once it puffs again, spread 1/4 cup of cheese around your tortilla, leaving about 1/4 inch perimeter around the edges.
  • Once the cheese is melted, add some chicken filling to half of the tortilla round. Careful not to add too much filling or your quesadilla will be overstuffed. Then fold over the other half and cook a few moments. Press down gently and flip over to ensure both sides are heated. Remove onto a cutting board. Slice in half to form two triangle pieces. Garnish with additional fresh chopped scallions before serving. Repeat with remaining tortillas until you make your desired amount of quesadillas.
