2 Ingredient Chocolate Coke Cake

This coca-cola cake is made with just a box of chocolate cake mix and a bottle of coke! It’s a super easy 2 ingredient chocolate cake when you’re craving something sweet.

Who knew that coca cola had so many uses? Mix it with chocolate cake mix, and you get this very fluffy and fudgy chocolate cake. So easy and so good.

I’ve made two ingredient chocolate cake before with pumpkin puree. It was fudgy but also dense and a little too plain for me and not something I particularly loved. But this coca-cola cake I would make again.

I got the idea from a recipe for Dr. Pepper brownies I saw on The Novice Chef. I wanted to make it but with coke because I don’t like Dr. Pepper. I was all set to make it when I realized I was out of boxed brownie mix. Noooo. So then I thought, what if I tried using cake mix instead?

I re-read The Novice Chef’s post for clues. She described the brownie texture as being cakey and fudgy, so I figured it should work with cake mix. Also, she mentioned that her mom used to make a cake with just diet coke and cake mix. And that made me want to make it with coke and cake mix only.

After I made this, I did some more research and found out there is a popular Weight Watchers recipe that uses diet coke and cake mix. I don’t know if it tastes the same with diet coke, but I am really happy with the regular coke cake.

My only issue is that because you don’t use any eggs, there’s no binding agent. So the cake fell apart easily. Great for eating on your own, but not as great for serving. Next time I might try adding an egg, or baking it into cupcake liners so I don’t have to deal with cutting the cake, which is messy because so many crumbs fall off.

I would definitely make this again and am thrilled to find a new use for cake mix and coke.

Ingredients

  • 1 box chocolate cake mix
  • 1 (12-oz) can coca cola

Instructions

  • Preheat oven to 350°F. Pour cake mix and can of coke into a large bowl and mix until there are no lumps in the batter. It may be easier to use a mixer because it took me a while to get out all the lumps with a hand whisk.
  • Line a 9 x 13-inch pan with parchment paper. Pour batter into pan. Bake for approximately 35 minutes or until knife inserted comes out clean. Cool before cutting. Cake crumbs do fall apart easily so cut carefully with a sharp knife. You can also bake into individual cupcake liners to make it less messy.

  1. Amazing, no eggs nothing else but my favorite can of bubbly and there it is a cake batter

Not a fan.  It’s okay, certainly easy to make, even a child could do it!  It didn’t raise very much, but it was nevertheless very light.  The taste was just okay, not great.  I imagine it would be good smothered in vanilla ice cream.  The picture shows the cake cut up into brownie size squares, so maybe that would help if covered with gooey gooey gicky choco frosting?  OR, maybe the problem is me:  I’m from the Old School:  a cake needs eggs, oil and vanilla.  Regardless, I wouldn’t make it again.  I made a pistachio bundt cake last week, made with pistachio pudding mix and white cake mix, that beats this all to heck.  It raised beautifully, turned out nice and light, didn’t need icing, was extremely tasty, and everyone raved about it — there’s none left!  Yeah, I’ll go with that one next time. 

    • We’re sorry you didn’t enjoy the cake. Just wondering – did you read through the post before making it? We discuss how it’s not exactly like a regular cake – without the egg, the cake is a little crumbly. Because of this, we think this makes a great snack cake and not necessarily a special occasion cake. Many readers appreciate this recipe because it’s so easy to make and easy to adapt, but it sounds like you enjoy traditional baking more.

  3. Just a helpful thought: I’d use that delish cake crumble and make cake pops. Add in some icing and make them into balls shove a stick in them line them up on parchment baking sheet and freeze then just dip in some melted chocolate. It’s a bit of extra work but there’s other ideas you can do as well. Like mixing it in with ice cream. Treat it like a happy Lil accident and make something from it.

  4. Made this chocolate coke cake delicious, I added ½ cup mayonaise it stops the cake from crumbling real easy.

  5. I bake a lot and wanted to experiment. I used the chocolate cake mix, Cherry cola, & 2 eggs. While still warm I poked holes and added Kahlua. Topped it with ganache made with chocolate chips and a can of warmed condensed milk. Yup, it was delicious. Thanks for the inspiration!

  7. Can this be made into cookies?

    • It probably won’t work well as cookies – the crumb is pretty loose and they might fall apart easily.

  8. I want to make this for a birthday, as one of the children attending is allergic to eggs. Have you baked this as cupcakes and how messy did it get eat them? 

    • Sorry, but we haven’t tried making the cake as cupcakes. Since the cake crumbles easily, they might be a little messy so you definitely will want to use cupcake liners if you try it. Also, the baking time will need to be adjusted.

  11. I used Diet Coke. It wasn’t as sweet but still tasted good, especially with vanilla ice cream. 

  12. This cake looks amazing. I am going to make it with orange soda and add 2 jumbo eggs per your advice to have a binding agent. I plan to decorate it with powdered sugar and candied orange peel.

  14. Hi Hello and Howdy from beautiful Danville IL! Love Love Love the concept. Me being me (and having read all the other comments I had to “do it my way” I did add 2 large eggs and instead of using a “12 oz can of soda pop” I used my soda stream and made Cherry Cola (added a wee bit extra syrup too!yum!) and mixed with a chocolate cake mix. BEST EVER Chocolate covered cherry cake. Only wish I could have topped it off with Marshino Cherries…..darned Covid has every grocery store in town closing early ugh! Anxious to try some “other” ideas. like a whote cake and Sunny D! What do you think will it work? I will cARBONATE THE sUNNY d WITH MY sODA sTREAM!

  18. Flavor came out good but the cake  broke  and it was too many crumbles. What can be the problem ? 

  19. Don’t have much trouble with cake falling apart but because it tends to shrink in height after it cools I baked it this time in a 7×11 pan and it was perfect.

  25. I made this cake for a dinner for my boss. I put it in a Bundt pan, used 8oz of Coke and added 2eggs. It is delicious!! She just raved of how delicious it was! Thank you Kirbie!?

  26. I am baking tis now, didn’t really think it would rise up, but it did! Look and smell good , can wait to taste it ! My grandbaby loves cake , I hope she likes this better . So easy .

    • I’m sure you can but you’d also have to tweak the amount of coke too. I haven’t tried it with eggs so I don’t know the exact changes that would have to be to made
