This fluffy mug cake is scented with lime zest for a light and citrusy finish. It’s not too sweet and ready in less than five minutes.
I had a really fun weekend with some good friends visiting, but I didn’t have much time for baking. I couldn’t imagine ending the weekend without a baked good, so this 5 minute mug cake was the perfect solution.
Last week I had lunch with CC and she gifted me with some great food items, including a jar of lime curd. I immediately wanted to make a lime mug cake with it, much like my lemony mug cake.
I decided to mix it up a little, with this oversized wide-rimmed cup. It ended being the perfect size for this mug cake.

Lime Mug Cake
Ingredients
- 4 tbsp all- purpose flour
- 1/4 tsp baking powder
- 2 tsp granulated sugar
- 3 tbsp fat-free milk
- 1/2 tbsp vegetable oil
- 1/2 tsp fresh lime zest
- 1 tbsp lime curd
Instructions
- Combine all ingredients except lime zest into an oversized microwave-safe mug. Mix with a small whisk until batter is smooth. Stir in lime zest.
- Cook in the microwave for about 1 minute. Let cake cool a few minutes before eating. The cake is best consumed while still warm or within a few hours of it being cooked.
