These no bake peanut butter brownies don’t require any baking or cooking. The brownies need just 3 ingredients and don’t contain any wheat flour, eggs, refined sugar, dairy, butter or oil. The brownies also store well.

These easy no bake brownies are great for a snack or dessert. They are soft and a little chewy, with a strong peanut butter flavor.

Ingredients

  • Peanut butter
  • Dates
  • Almond flour

Peanut butter: This recipe uses natural peanut butter with no added oils. Make sure to use a peanut butter with no added oils. Added oils will prevent the peanut butter from thickening to a brownie texture.

Dates: The brownies are naturally sweetened with dates. Dates also act as a binder, add a chewy texture and thicken the peanut butter. This recipe works best with Medjool dates which contain more soft flesh than other date varieties and will help create a better smooth date paste.

Almond flour: Superfine almond flour is added to give the brownies a crumb and texture like baked brownies.

How to Make No Bake Peanut Butter Brownies

  • The dates, peanut butter and almond flour are mixed on high speed in a food processor until the dates are broken down and your mixture becomes soft and slightly crumbly. The mixture should look like soft brown sugar. However, when you pinch some of it together, it should hold its form and stick together. If it doesn’t, you can add a little water, more dates or more peanut butter until the mixture will stick.
  • Transfer the mixture to your prepared baking pan and press it firmly into the pan so that the mixture is no longer crumbly. Place into the fridge to set.Brownie mixture in a food processor and then in a loaf pan
  • If desired, you can add frosting to the brownies before cutting and serving.

Texture

These brownies have a soft and slightly chewy texture. The almond flour adds a slight crumb to the brownies, making them taste like they were baked.

Expert Tips

  • Make sure to use natural peanut butter with no added oils. When natural peanut butter is mixed with the dates, the dates thicken the peanut butter to a dough-like consistency.
  • You do need to firmly press the mixture so that it is solid and not crumbly before placing into the fridge to set. This will allow you to easily cut these brownies into bars and serve.
  • I added a dark chocolate ganache frosting but you can also just drizzle with melted dark chocolate or add other frostings.

3 Ingredient Healthier No Bake Peanut Butter Brownies

These healthier peanut butter brownies don't require any baking or cooking. They are soft, chewy and full of peanut butter flavor. Just 3 ingredients and no wheat flour, eggs, refined sugar, dairy, butter or oil.

Ingredients

  • 1 packed cup (160g) pitted Medjool date halves, see note before starting
  • 1/2 cup (128g) unsweetened natural peanut butter with no added oils
  • 1/4 cup (22g) superfine blanched almond flour

Instructions
 

  • Line an 8 x 4 inch loaf pan with parchment paper.
  • Add dates, peanut butter and almond flour to a food processor. Pulse on high until the dates are fully broken down and the mixture becomes uniform in color and texture. You may need to stop your food processor and scrape the sides and bottom to help everything evenly mix. Your mixture should be light brown and slightly crumbly, resembling soft brown sugar in appearance. See photo in post for reference.
  • Your mixture should look crumbly but when you pinch it together, it should stick. If it doesn't stick, you can add a little water, a little more peanut butter or a little more dates and blend again until your mixture will stick together.
  • Transfer the mixture to your prepared pan. Firmly press the mixture evenly across the pan. Use your fingers and palms to really compress your dough so that it sticks together. It should look solid and not crumbly. See photo in post for reference.
  • Place brownies into fridge for about 1 hour. This will let the dough firm up, making it easier to slice. If desired, you can also drizzle the brownies with melted chocolate or add a frosting before serving. Store uneaten brownies in the fridge or freezer in an airtight container.

Notes

  • Dates note: You want to use Medjool dates for this recipe because they have more soft flesh. You will also want to use fresh, soft dates. If your dates are a little dry, you can rehydrate them in warm water (soak them for about 15 minutes in warm water and then drain and pat dry) before using.

  • Optional chocolate frosting:
    • 1/2 cup dark chocolate chips
    • 1/4 cup canned coconut milk (must be canned coconut milk and not the drinking kind which doesn't have enough fat; you can also use heavy cream if you don't need this to be dairy-free)
    • Add chocolate chips to a medium bowl and set aside. Heat coconut milk in a small pot or pan over medium low heat. Heat until simmering. Pour hot coconut milk over chocolate chips. Let sit for 60 seconds then gently mix until chocolate is completely melted. If the chocolate is not completely melted, you can briefly heat in the microwave and stir again until melted. Frost ganache over surface of the brownies.
