My favorite soup is the Chicken & Riced Cauliflower Soup. I love that it uses cauliflower rice (which I love to eat) instead of regular rice, making it a nice low carb option. The soup is flavorful, comforting, and filled with cooked onions, celery and carrots, plus antibiotic-free chicken and cauliflower rice. The soup inspired me to make some low carb soup crackers to serve with it.
These crackers are crunchy, cheesy and savory. And they are only 3 ingredients.
Ingredients
- Parmesan Cheese
- Almond Flour
- Water
Parmesan Cheese: This recipe uses freshly grated parmesan cheese. It will not work with the shelf-stable kind.
Superfine Almond Flour: You want to use superfine almond flour because the texture is finer and smoother. I used bleached superfine almond flour so the color of the crackers would look more even as well.
How to Make Low Carb Crackers
The cheese, almond flour and water are blended together until they can form a dough. You then roll out the dough and cut the crackers. The crackers are then baked in the oven until crispy.

3 Ingredient Low Carb Crackers
Ingredients
- 1/2 cup (54 g) grated parmesan cheese
- 1/2 cup (55 g) superfine blanched almond flour
- 1-2 tbsp (15 ml-30 ml) water
Instructions
- Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
- Add cheese and almond flour into a food processor and pulse until the cheese begins to stick to the almond flour and forms large crumbs. Add 1 tbsp water and pulse again. When you squeeze the crumbs between your hands, they should stick together like dough. If your dough is too crumbly, add another 1 tbsp of water and pulse again.
- Roll dough out between two sheets of parchment paper until it is between 1/8 to 1/4 inch thick. The thinner your dough is the crunchier the crackers will be. If your dough is thicker, the crackers will be puffier and less crunchy. I cut my crackers into 1/2-inch by 3/4 inch rectangles but you can choose other shapes or make them bigger or smaller. Place crackers onto baking sheet, making sure none of them touch.
- Bake crackers for 10 minutes. Remove baking sheet from oven briefly and flip crackers over. Place baking sheet back into the oven and bake crackers an additional 5-10 minutes or until crackers are browned and the tops feel firm and crunchy to the touch. Let crackers cool before eating.
