4 Ingredient Healthier Pumpkin Pie Oatmeal Bars (No Flour, Eggs, Refined Sugar, Dairy, Butter or Oil)
These healthier pumpkin pie oatmeal bars have all the flavors of pumpkin pie in oatmeal bar form. They are just 4 ingredients and don’t contain any flour, eggs, refined sugar, dairy, butter or oil. They are easy to make and store well.

These oatmeal bars are soft, chewy and full of pumpkin and pumpkin pie flavor. They only take a few minutes to prepare and you don’t even need a mixer to make them.
Ingredients
- Quick Oats
- Pumpkin
- Maple syrup
- Pumpkin pie spice
Quick oats: These bars work best with quick oats. Quick oats are smaller and thinner than regular rolled oats so they bind better and cook faster.
Pumpkin puree: I used canned pumpkin puree but you can also use homemade. Make sure to use pumpkin puree and not pumpkin pie filling which contains sugar and spices.
Maple syrup: The bars are sweetened with maple syrup. You can likely substitute with other liquid sweeteners.
Pumpkin pie spice: Pumpkin pie spice is added to give the oatmeal bars their pumpkin pie flavor.
How to Make Healthier Pumpkin Pie Oatmeal Bars
- The pumpkin, maple syrup and pumpkin pie spice are first mixed together. The oats are then stirred in until they are fully incorporated.
- Transfer the mixture to your prepared baking pan and use a spatula to spread it evenly across.
- Bake for about 25 minutes or until the bars are done.
Texture
The bars are soft and chewy. They are lightly sweet but not as sweet as traditional pumpkin pie. You can add more syrup if you prefer them to be sweeter.
Expert Tips
- If you don’t have quick oats on hand, you can pulse rolled oats in a food processor for a few seconds until they become the size of quick oats.
- You can likely use other liquid sweeteners instead of maple syrup but I think maple syrup makes these taste more like pumpkin pie.
- You can leave out the pumpkin pie spice if you don’t like pumpkin pie spice, but your bars won’t really taste like pumpkin pie bars.

4 Ingredient Healthier Pumpkin Pie Oatmeal Bars
Ingredients
- 1.5 cups (327g) pumpkin puree
- 4 tbsp (59ml) maple syrup, or more to taste
- 1 tsp (2g) pumpkin pie spice
- 2 cups (175g) quick oats
Instructions
- Preheat oven to 350°F (177°C). Line an 8 inch by 8 inch baking pan with parchment paper leaving some overhang for easy removal later.
- Add pumpkin, maple syrup, and pumpkine pie spice to a large mixing bowl. Mix with a spatula or whisk until evenly combined. Add in oats. Mix with a spatula until the oats are fully incorporated. Your batter will be very thick. Taste, and if needed, you can add a little more syrup.
- Transfer the batter into your prepared baking pan. Use a spatula to evenly spread it across the pan and smooth the surface.
- Bake for about 20-25 minutes or until the bars set and cooked through. Let bars cool fully before removing them from the pan and cutting and serving. Store uneaten bars in an airtight container in the fridge or freezer.

I added more maple syrup about 2 more Tbsp., 2 tsp of vanilla, and an additional 1 tsp ceyelon cinnamon, also a pinch of salt. I then added raisins ( I think cranberries would be better but I didn’t have any) and 1/4 cup walnuts. I baked in parchment lined muffin tins.

Hi I am making this recipe as I type. Question though can other things be added in without compromising tje end result! Such as dates,raisins or chopped walnuts?
We haven’t tested this recipe by adding anything but we have had others add things like raisins, chocolate chips and walnuts!

Pumpkin pie spice is not easily available in Aus. What individual spices could I substitute?
If you can’t find pumpkin pie spice, you can make your own blend using common spices. For this recipe, mix together: cinnamon, nutmeg, ginger, cloves (optional).
