4 Ingredient No Bake Lemon Cake Balls (No Wheat Flour, Eggs, Dairy, Butter, or Oil)
These no bake cake balls have a zesty and sweet lemon filling and don’t require any baking. They need just 4 ingredients and don’t require any wheat flour, eggs, dairy, butter or oil. The cake balls store well and can be made ahead of time.

These cake balls feature a no bake filling that tastes like a moist lemon cake. It’s an easy treat to make when you don’t feel like turning on the oven.
Ingredients
- Lemons
- Almond flour
- Maple syrup
- White chocolate
Lemons: Fresh lemon juice and lemon zest are used to give the truffles their lemon flavor.
Almond flour: Make sure to use superfine almond flour and not regular almond flour. The finer texture will melt better and mimics the texture of flour better.
Maple syrup: Maple syrup is used to sweeten the filling and help the filling bind together. If you need a substitute for maple syrup, the recipe does work with honey.
White chocolate: The balls are coated in white chocolate. Make sure to use dairy-free white chocolate if you need the balls to be dairy-free. If using white baking chips, make sure you use a premium brand and start with a fresh bag. Old white baking chips don’t melt as well. You can also coat the balls in dark chocolate, milk chocolate or semisweet chocolate.
How to Make No Bake Lemon Cake Balls
- The almond flour, maple syrup, lemon zest and lemon juice are mixed together.
- Transfer the mixture to the freezer to firm up.
- Scoop the mixture with a 1 tablespoon cookie scoop and form smooth balls. Place the balls back into the freezer until frozen solid.
- Melt chocolate until smooth. Coat the balls in melted chocolate. Allow the chocolate to set before serving.

The cake balls have a firm chocolate coating and a soft, moist lemon filling.
Expert Tips
- The recipe is very forgiving. You can add a little more maple syrup if you find the mixture dry. If you find it to be too wet, you can add a little more almond flour.
- You can customize with different chocolate coatings. You can use milk, semisweet, dark or white chocolate.

4 Ingredient No Bake Lemon Cake Balls
Ingredients
- 2 cups (226g) superfine blanched almond flour
- 2 tbsp (1 fl oz/30 ml) lemon juice + 1 tsp zest
- 5 tbsp (2.5 fl oz/74ml) maple syrup
- 2 cups (338g) white melting wafer, white baking chips or chopped white chocolate
Instructions
- Add almond flour, lemon juice, zest and maple syrup to a large mixing bowl. Mix until everything is evenly combined. You should have a thick dough that can stick together if you pinch it. If the dough seems to wet, add a little more almond flour. If it's too dry, add a little more syrup.
- Transfer the dough to the freezer to harden up, about 15 minutes.
- After the dough is workable, use a 1 tbsp cookie scoop to scoop the dough and roll into smooth balls. Place the balls on a parchment-lined baking sheet. Freeze the balls for at least 20 minutes or untill fully firm.
- In a microwave-safe bowl, melt the white chocolate in 20-second intervals, stirring in between until smooth. Alternatively you can do this on the stove using the double boiler method. If your chocolate is too thick, you can use a little coconut oil to thin it out.
- Using your preferred dipping tool, dip and coat each ball into the melted white chocolate, letting the excess chocolate drip off. Place the coated balls back on the parchment-lined baking sheet. If desired you can garnish with chocolate drizzles or lemon zest. If garnishing with lemon zest, make sure to pat the lemon zest dry or it will cause discoloration on the chocolate coating. You can let the chocolate set at room temperature or in the fridge. Store leftover balls in an airtight container in the fridge or freezer.
Notes
- White chocolate note: You can use white melting wafers, chopped white chocolate or white baking chips. If you need these to be dairy-free, make sure to use a dairy free white chocolate.

Hello . I do not mean to ruffle anyone’s feathers , but , as far as I know , most white chocolate chips or melting wafers have milk solids , or is made with sweetened condensed milk . So this recipe , as good as it sounds, has dairy in it.
It is stated in the post that if you need these to be dairy-free, choose a dairy-free white chocolate to coat the balls in. While white chocolate generally contains dairy, there are several dairy free brands. We like using Enjoy Life white baking chips.

Is Oat flour KETO. daughter alergic to tree nuts
Oat flour is not keto. Unfortunately we do not have a substitute for almond flour at this time.
They were surprisingly good. But think they would be better just drizzling the white chocolate on them, instead of covering them in it, too sweet
