This S’mores pie is so rich and creamy. It has layers of graham crackers, chocolate fudge filling and marshmallow topping. This easy pie needs only 4 ingredients and doesn’t require any baking. It also uses a secret healthy ingredient in the chocolate fudge filling, but you won’t be able to tell.
I always crave S’mores this time of year as we start heading towards the end of summer. I love making S’mores inspired desserts which are less messy to eat than classic S’mores, but just as satisfying.

- Graham Cracker Pie Crust
- Chocolate Chips
- Cottage Cheese
- Marshmallows
Graham cracker pie crust: I used premade graham cracker pie crust to make this recipe even easier but you can definitely make your own as well.
Chocolate chips: The chocolate fudge filling of the pie is made with milk chocolate chips. Make sure to use milk chocolate chips and not semisweet, dark or white chocolate. The fudge filling will not set the same if you change the type of chocolate used.
Cottage cheese: Cottage cheese is the secret healthy ingredient used to give this pie filling its ultra creamy texture without needing to add butter or cream. This fudge filling is still so rich and creamy. When the cottage cream is mixed with the melted chocolate, it thickens the melted chocolate so you end up with a rich and creamy chocolate fudge filling.
Marshmallows: I used mini marshmallows on top of the pie but you can also used full size regular marshmallows. To give the marshmallows their toasted appearance and make them more gooey, you can either toast the tops with a kitchen torch or you can put the pie in a broiler and toast the marshmallows.
How to Make S’mores Pie
- The chocolate chips are first melted until smooth. They are then added to a blender along with the cottage cheese. Blend until you have a smooth, thick chocolate mixture.
- Then pour the filling into your pie crust. Use a spatula to even out the filling. You don’t need to spend too much time smoothing the surface because it will be covered in marshmallows. Place the pie into the fridge to set.
- Once set, cover the pie with a layer of mini marshmallows.
- Right before serving, torch the marshmallows with a kitchen torch or put the pie in a broiler and broil for a few minutes on high until the marshmallows are toasted and golden brown.
Pie Texture and Sweetness
This pie has a very creamy chocolate filling. The filling is quite rich and sweet, so I do recommend cutting the pie into small servings.

Ingredients
- 3 cups (500 g) milk chocolate chips
- 1 1/2 cups (341 g) lowfat cottage cheese, small curd see note
- 1 (9-inch) premade graham cracker pie crust
- 1 1/4 cups (62 g) mini marshmallows
Instructions
- Add chocolate chips to a microwave safe bowl. Heat in 30 second increments, stirring in between with a spatula, until it’s completely smooth and melted.
- In a blender or food processor, blend the cottage cheese and melted chocolate until smooth and creamy, with no cottage cheese chunks remaining. You will need to stop your blender/food processor a few times to scrape the sides and under in order to help the blender mix and blend the cottage cheese fully.
- Pour the pie filling in the graham cracker pie crust, spreading it out evenly with a spatula.
- Refrigerate the pie until the filling is set. It will need a few hours or you can also refrigerate overnihgt. If desired, you can freeze the pie for an hour before serving. While the pie filling sets nicely just in the fridge, freezing it will make it easier to cut and remove slices because of the delicate nature of the graham cracker crust.
- Before serving, evenly sprinkle mini marshmallows over the top of the pie. Toast the marshmallows with either a kitchen torch, or place your pie into your broiler and broil the pie for a few minutes on high until the marshmallows are toasted. If doing this method, make sure to watch the marshmallows the whole time so the marshmallows don't burn. Let the pie cool for a few minutes before slicing with a large sharp knife and serving.
Notes
- I used 2% cottage cheese, small curd, though you can also use 4%. I used Daisy cottage cheese. I don't recommend using Good Culture brand. Good Culture cottage cheese has a stronger acidic flavor and doesn't work as well for this recipe.
- This pie is very rich and sweet. We recommend cutting it into small slices, about 12-14 servings per pie.
- Make sure to use milk chocolate chips. The pie will not set the same if you change the type of chocolate.

This s’mores pie looks delicious and I will try to make it. I do have a question – you suggest freezing it for an hour so it is easier to cut into slices. But your instructions also include, after taking it out, to then add the marshmallows and put it in the broiler for a few minutes (I don’t have a kitchen torch). Won’t that get rid of the benefit of having it in the freezer for an hour?
Instead, could I do the broiler thing before putting it in the freezer for an hour?

Toasting them after the pie has set will give it that fresh roasted marshmallow flavor and will keep the marshmallows soft! The pie is only in the broiler for a few minutes and the pie should still be cold after, with only the marshmallow topping warmed. You won’t want to freeze the pie after toasting the marshmallows because that will change the texture of the marshmallows

This recipe looked really good except for the cottage cheese. I can’t stand cottage cheese! Is there something you can substitute? Maybe cream cheese?
We have not tested this recipe with anything other than cottage cheese! You shouldn’t be able to taste it too much with the added chocolate in this recipe!
